7 Minute Breakfast Burrito

Seven Minute Breakfast Burrito | A filling hearty breakfast that is ready in seven minutes!

I have this awesome husband (have I mentioned him?). He takes really good care of us. He works super hard so that I can be at home with our kids, and after spending a long day working hard, he comes home and is an amazing dad and really supportive husband.

But . . . sometimes he works so hard to take care of us that he forgets to take care of himself. Including eating breakfast. Enter the 7 Minute Breakfast Burrito!! Thank goodness he gives me a chance to take care of him too.

In talking to different people in my life, it really does amaze me how many people skip breakfast. If I skipped breakfast I’d be screaming at people (i.e. the children) by like 9:30. It’s been called the most important meal of the day, and studies have shown that people who eat a healthy breakfast are more likely to lose weight. That’s probably because when you start out the day satisfied, you are less likely to scavenge for junk. Eating a healthy breakfast will also help you do better in whatever it is you are doing during the day.

Enough of my soap box. On to the burrito.

I use chicken sausage, two egg whites and one full egg, a burrito shell that is low in calories (80) and high in fiber (12 g), a handful of mushrooms (pre sliced to save time), and a handful of reduced fat shredded cheese.

And it really is ready in only 7 minutes! So no matter how busy your morning is, you should be able to squeak in this healthy, hearty, yummy breakfast. I make it every morning for Nathan while he is in the shower and my kids are yelling at me.

Once the burrito is done, I wrap that bad boy up in some foil, throw it in a zip lock bag, and hand it off to Nathan as he bikes out the door.

{If you look really closely, you can see the expression on Nathan’s face that says, “Why is my crazy wife standing on our front porch in her pajamas taking my picture??” as he bikes off to work.}

And! Nathan says that it is still toasty warm 30 minutes later when he sits down at his desk to eat it. So do your tummy a favor and start your day right! If you are anything like my wonderful husband, it will make you a happier person.

7 Minute Breakfast Burrito

1 whole wheat tortilla shell
2 egg whites
1 whole egg
small handful of pre sliced portabella mushrooms
small handful of shredded reduced fat monterey jack cheese
1 chicken sausage (I like using Cajun flavored ones)
1 tbsp fat free creamer

  1. Turn on your stove top and set it to medium high heat (if you have a stupid electric stove like I do, if yours is gas I’m jealous and you should be good to go).
  2. Get out all of your ingredients, a cutting board, and a knife.
  3. Slice the sausage lengthwise, and then make little half inch half moons.
  4. Spray a medium skillet with light cooking spray and toss in your mushrooms, stirring them occasionally.
  5. While the mushrooms are cooking, crack your eggs, getting rid of two of the yolks. Add a splash of fat free creamer. If you don’t have that on hand, I’ve used a splash of water to make the eggs a little fluffier. Whisk it all together and sprinkle in some salt and pepper.
  6. Once the mushrooms have cooked down a little bit (after about two or three minutes of cooking), spray your pan again and throw in the sausage.
  7. While the sausage is cooking, wrap the tortilla shell in a clean kitchen towel and throw it in the microwave for 30 seconds, cooking it on half power. (This will make it easier to fold.)
  8. Pull out a square of aluminum foil.
  9. If your mushrooms are cooked down and your sausage is shimmery and a little crisp, give your pan one final spray and toss in your eggs.
  10. Let your eggs sit for about thirty seconds and then start pulling them with a spatula from the outside of the pan to the center. Work your way around the whole pan doing that.
  11. Cook your eggs to your desired doneness, stirring as they cook.
  12. Put your warm shell on to the aluminum foil.
  13. Pour all the contents of the pan into the center of the shell.
  14. Sprinkle with cheese, pull the edges of the shell together, and wrap with the foil.
  15. Throw it in your purse, bag, hand it off to your hungry spouse, or sit down and enjoy!

    Yumm! I’ll have to try this for my own breakfast (or rather, have my husband try it, cuz he’s a doll like that and makes me breakfast!) I always eat something for breakfast cuz I’m definitely pretty cranky if I don’t eat, but on some days it’s a chai latte from Starbucks, which doesn’t really count… Thanks for sharing this at The Fun In Functional!
