Apple Cider Sugar Cookie Pizza | A delicious and super easy dessert that will feed a crowd
So I think that Quinn might be messing with me.
Either that or she is color blind.
I have been trying to teach her her colors, and she is {ahem} struggling. The great thing is that she is really trying! Well . . . sort of.
She will regularly point to something and say, “Yeyyow??” trying to figure out what color everything around her is. I love that young inquisitve mind. Okay, so the thing that she just pointed to is actually red.
I say, “No, try again, sweetie!”
“Puple???”
“Noooooooo . . . “
“Yeyyow????”
Dude. I just said no to yellow. I just look at her and she starts laughing hysterically.
The color that she knows consistently? That she gets each and every time without fail??
Pink.
Greeeeeeaaat.
So, now the other day, I was giving her a bath, and she takes these two flat foam bath pieces and fits them together perfect on the hower wall to make a circle and says to me clear as day, “Look, Mommy! I made a ‘O'”
Ummmm . . . say what now??
Easier to figure out than my daughter’s brain? This Apple Cider Sugar Cookie Pizza!
This pizza comes together super easy, is amazingly delicious, and it’s huge, so it feeds a crowd! It was gone from Nathan’s office in less than two hours ;)
Apple Cider Sugar Cookie Pizza
- 1 (16.5oz) package of refrigerated sugar cookie dough
- 8 oz of cream cheese
- 1/2 cup of white chocolate chips
- 1/2 cup apple cider
- 1 tsp cinnamon
- 1/2 cup powdered sugar
- Preheat your oven to 350 degrees.
- Spread out the cookie dough into a large round circle on a pizza baking sheet. Keep in mind not to make it too thin, as the dough will spread during baking.
- Bake for 15 minutes or until the edges start to turn lightly golden brown.
- While the cookie is baking, melt the cream cheese, white chocolate chips, and apple cider in a saucepan over medium heat. Stir continuously until well combined.
- Whisk in the cinnamon. Let the mixture come to a simmer, and then add the powdered sugar. Continue to simmer until it has thickened, about five minutes.
- When the cookie pizza comes out of the oven, spread with the apple cider mixture and allow it to set, about 10 minutes before serving.
