If you’ve spent more than about two minutes on my blog, you know that I’m not a perfect mom. (Psssst . . . it takes way less than two minutes to figure it out in person.)  I probably yell at my kids too much. I’m certain I let them watch too much TV. I’m not proud of the amount of times (and ways) I’ve bribed them . . . I’m currently convinced that candy was invented by a mother trying to potty train her stubborn toddler.

But! Dinnertime. Dinnertime is like the one time of day that sort of feels like a win . . . well, at least like five days out of seven. It’s the time of day that I make sure they have their vegetables, that I try to feed them something balanced, and that I make sure they are trying new foods.

And it’s our family time. Sure, we do other things together, family walks, apple picking, bike rides, trips to Target (wait . . . does that count as family time??), but it’s dinnertime when we really talk to each other. When Gavin tells us about his day at school, and we get a good sense of what life is like there for him. When Quinn talks, and we all listen to her little voice and hear what she has to say. When my kids get to see Nathan and I and how we interact with each other.

It’s also when we play games . . . . hear me out. Sometimes when my kids are antsy, and it literally seems like their chairs on our fire and they can’t keep themselves in them, we break out a family game to play. Not a game with pieces, but a game where we talk to each other, we laugh, and we make it through dinner sanity in tact. And if someone is too busy playing to eat, they only get to take their turn once they take another bite or two.

EASY Asian Fish Tacos

These Asian Fish Tacos come together soooooooo easily with SeaPak’s Popcorn shrimp! (Which, PS My husband polished off the the rest of the shrimp before they could even make it into more tacos, my house needs another box, STAT.)  This was one of those dishes that I was photographing and I had tasted each ingredient, so I felt pretty confident that it was going to be good. But {cough} I didn’t realize how good.

 I took a bite of taco when I was done taking pictures and then suddenly all three tacos just disappeared!

 

These tacos are perfect for weeknight dinner because of how easy they are, and the fact that you can prepare so much of it ahead of time, but they make you feel like you are eating at a fun and funky little taco restaurant!

Asian Fish Tacos with Sriracha Crema Recipe

Asian Fish Tacos with Sriracha Crema

Serves: 12 tacos
(tap # to scale)

Ingredients

  • 10 oz shredded purple cabbage
  • 1/3 cup rice wine vinegar
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 TBSP black sesame seeds
  • 1/2 cup sour cream I used reduced fat
  • juice of one lime
  • 1/2 TBSP sriracha sauce
  • 12 oz box of SeaPak popcorn shrimp cooked to package instructions
  • 12 small tortilla shells
  • lettuce chopped

Instructions

  • Mix together the rice wine vinegar, sugar, and sesame oil. Pour over the cabbage and then stir in the sesame seeds.
  • In a separate bowl, mix together the sour cream, lime juice, and sriracha sauce.
  • Assemble the tacos by adding a little bit of chopped lettuce to each shell and then topping with shrimp, slaw, and sriracha crema.

    Honestly, that collection of little games has gotten us through some of the shorter road trips. Love it!
