Bruschetta Meatloaf Cups ~ Meatloaf loaded with Stuffing Mix, Diced Tomatoes, Cheese & Garlic!

Guys! My super awesome friend, Julie, from Julie’s Eats and Treats is here today!! I absolutely love her for three million reasons. One of the biggest reasons being that I can message her night or day complaining about the most ridiculous things and she totally gets it. She’s awesome. And she makes the most drool worthy meals. I like to call her the Queen of Crock Pot because she is constantly coming up with amazing slow cooker dinners like her Crock Pot Mac & Cheese.  She’s got ridiculous desserts like her Biscoff Fudge and her Dessert Nachos . . . Drooooool!

Hey Everyone! I’m so glad to meet you! I blog over at Julie’s Eats & Treats and I’m so excited to be here sharing a recipe on Wine & Glue while Lisa is “enjoying” her maternity leave! When I had my first child I thought maternity leave was a wonderful vacation from my job while I just snuggled with my newborn baby. Boy, did I have a wake up call! After many, many tearful calls to mom and wondering what I got myself into things started to turn around and I was able to relax and enjoy about 2 days before I headed back to work! I always tell new moms if your survive the first two weeks you can do anything!

I hope Lisa has it more together than I did :) I’m sure she does right?

Lisa and I met “virtually” over a year ago and we instantly hit it off. She’s such a sweet and kind person, plus she lives “close” to me in a neighboring state so we can officially whine about the cold weather and crappy winters together, vent about our blogging life and offer each other support in this crazy blogging world because unless you live it sometimes it’s just hard to understand! This past winter we were able to meet in person when we got to tour the Pillsbury headquarters. It was an amazing experience and she’s every bit as sweet and wonderful in life as she is online!

If you haven’t visited my blog “Julie’s Eats & Treats” before let me share the focus of it. Simply put it’s Simple, Easy and Delicious food! My goal is to provide you with all kinds of options for your lifestyle, which if it’s anything like mine is crazy, hectic and a little overwhelming at times. Recipes have to work with your life and simple is the only way to do it in my book. My eyes start to glaze over after the fourth ingredient or fourth line of directions in a recipe. That causes some disasters in the kitchen. Just ask my mom….or my professor back in college!

These amazing Bruschetta Meatloaf Cups offer a fun twist on the same old meatloaf that you make. They are super simple and easy plus they bake quicker because they are baked in muffin tins so they are perfect for a busy weeknight!

Bruschetta Meatloaf Cups {Guest Post from Julie’s Eats and Treats}

Ingredients

  • 1 14 oz can diced tomatoes, undrained
  • 6 oz package chicken stuffing mix
  • 1 pound lean ground beef
  • 1 egg
  • 1 Tbsp minced dried onion
  • 3 garlic cloves minced
  • 1/2 c. shredded Italian 5 cheese blend

Instructions

  • Preheat 375 degrees.
  • In a large mixing bowl mix together tomatoes and stuff mix. Reserve half of mixture. Add egg and ground beef to remaining half. Press into a greased muffin tin.
  • Combine remaining mixture with onion and garlic. Spread over meatloaf mixtures. Cover.
  • Baked 30-40 minutes or until cooked through. Top with cheese mixture. Baked 10 minutes or until cheese is melted.

      Thanks for pointing that out Danielle! Sometimes my site likes to play musical chairs with my recipes, and while the Easter Egg Cookie Dough Truffles are DELICIOUS, probably not what you want to give your kids for dinner :)

    I like your muffin cup tip. I often am in either a hurry to or too frugal to run the oven for an hour especially in the summer when i have the AC on so I make patties of the meatloaf mixture and cook them in a heavy skillet. I sometimes add a gravy or a tomato sauce to keep them moist instead of browned like a hamburger.

    The last year I have been a meat loaf fool. I even order it in restaurants. Now that is almost sad. But I can’t help it. Lol. Of course I am groovin’ on this recipe. I am glad you survived beginning motherhood. It is a shock.
