So, as it does every year in Wisconsin, summer decided to just jump out of hiding after weeks and weeks of alluding us and yell, “I’M HERE PEOPLE!! AND I AM HOT!” I swear, every year we go from wearing winter boots to getting sun burns in the span of like two weeks. It’s totally ridiculous. It’s like one week I have all the ingredients to make our favorite soup and then I look around and my family is falling over itself because it is too hot to function.
So I am on the prowl for lighter dinners. And this Shrimp Scampi Salad is totally it. It starts with some of SeaPak’s Shrimp Scampi, which is super easy to use. It’s a matter of just throwing it in the oven, letting it bake, and draining it. It’s totally packed with all the great flavors of shrimp scampi, but then instead of throwing it over noodles, which would be perfect winter comfort food, you pile it on top of some amazing greens, toss in some shaved parmesan, asparagus, and a couple noodles. It’s all topped with a dressing that echoes the flavors of shrimp scampi.
It’s like everything you love about shrimp scampi, but without all the heaviness. Totally perfect for summer. Not only that, but it’s made with SeaPak shrimp, which is delicious but also means that it’s super easy to throw together. My family loves making dinners with SeaPak, like this pot pie and OMG, these tacos. It’s a staple in our freezer all the time. Perfect for busy weeknight meals that somehow still plague us in the summer.
Shrimp Scampi Salad
- For Salad
- 1 12 oz package SeaPak® Shrimp Scampi
- 2 cups arugula
- 2 cups baby spinach
- 1 cup cooked pasta (I used trumpet noodles)
- 1 cup fresh asparagus chopped
- 1/4 cup parmesan flakes
- For Dressing
- 3 TBSPs EVOO
- 2 TBSPs fresh lemon juice
- 1 TBSP white vinegar
- 1/2 TBSP grated shallots
- 1/4 tsp kosher salt
- 1/8 tsp red pepper flakes
- dash of pepper
- Cook the shrimp scampi according to package instructions, remove from sauce and drain on a paper towel to cool.
- Toss together the shrimp, arugula, spinach, pasta, asparagus, and parmesan.
- To make dressing, shake together the lemon juice, vinegar, shallots, salt, pepper, and red pepper flakes.
- Dress salad to taste.
