Homemade Queso Sauce

Ingredients

  • 1 TBSP unsalted butter
  • 1/2 a large jalapeño diced (about 1 TBSP)
  • 2 cloves of garlic diced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 TBSP all purpose flour
  • 1/2 cup 2% milk
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 1/2 cups shredded Mexican cheese blend

Instructions

  • Melt the butter over low heat and sauté the jalapeño and garlic until translucent.
  • Whisk in the chili powder and cumin. Then whisk in the flour until fully blended.
  • Slowly whisk in the milk a little at a time so that it fully combines.
  • Add the salt and the pepper and cook for about two minutes until it reduces.
  • Remove from the heat and stir in the cheeses.
  • Serve warm.

Notes

You can make this ahead and reheat before serving. Just microwave in 30 second intervals at half power until heated through, stirring after each 30 seconds.
When picking a cheese to make this with, don't pick one with a large portion of cheddar, as it tends to separate and make for an oily sauce.
