Shrimp Scampi Salad

Ingredients
For Salad

package SeaPakĀ® Shrimp Scampi

cups
arugula
2
cups
baby spinach
1
cup
cooked pasta
(I used trumpet noodles)
1
cup
fresh asparagus
chopped
1/4
cup
parmesan flakes
For Dressing
3
TBSPs
EVOO
2
TBSPs
fresh lemon juice
1
TBSP
white vinegar
1/2
TBSP
grated shallots
1/4
tsp
kosher salt
1/8
tsp
red pepper flakes
dash of pepper
Instructions
Cook the
shrimp scampi
according to package instructions, remove from sauce and drain on a paper towel to cool.
Toss together the shrimp, arugula, spinach, pasta, asparagus, and parmesan.
To make dressing, shake together the lemon juice, vinegar, shallots, salt, pepper, and red pepper flakes.
Dress salad to taste.
