Preheat your oven to 350 degrees Fahrenheit. Spray a 9 by 13 inch baking dish with cooking spray.
In a large bowl, whisk together the eggs, milk, heavy cream, vanilla, and cinnamon.

Stir the bread and apple pie filling into the egg mixture. Mix well so that all the bread is coated in the egg mixture. Pour into the prepared baking dish.

Use a pastry cutter or two forks to combine the brown sugar, butter, and quick-cooking oats. Pour it over the egg mixture in the baking dish. 1 cup brown sugar, 1/2 cup butter, 1/2 cup quick-cooking oats
Bake for 50 to 60 minutes or until the casserole starts to pull away from the edges of the dish. If it begins to brown too much, cover it for the last 10 minutes of the baking time.
Allow the casserole to cool for 10 minutes before cutting and serving.
