Crockpot Butter Chicken Recipe

Ingredients

  • 1 pound boneless skinless cihcken breasts diced into bite sized pieces
  • 1/4 cup unsalted butter melted
  • 8 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic minced
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper optional (see note)
  • 1 yellow onion diced small
  • 2 teaspoons lemon juice
  • 1/4 cup plain yogurt
  • 1/2 cup half and half

Instructions

  • Spray the slow cooker with cooking spray.
  • In the base of the slow cooker, combine the diced chicken, onion, melted butter, tomato sauce, ginger, garlic, garam marsala, chili powder, salt, and black pepper (optional).
  • Cook on low for 3 to 4 hours.
  • At the end of the cooking time, stir in the lemon juice, yogurt, and half and half.
  • The sauce will reduce but still be quite saucy. Serve with rice and naan.

Notes

My kids like this recipe better without the black pepper, it is actually the season that brings the most kick to this recipe. So if your family is sensitive to spicy food, try eliminating the black pepper.
