Shrimp Scampi Salad

Ingredients

  • For Salad
  • 1 12 oz package SeaPakĀ® Shrimp Scampi
  • 2 cups arugula
  • 2 cups baby spinach
  • 1 cup cooked pasta (I used trumpet noodles)
  • 1 cup fresh asparagus chopped
  • 1/4 cup parmesan flakes
  • For Dressing
  • 3 TBSPs EVOO
  • 2 TBSPs fresh lemon juice
  • 1 TBSP white vinegar
  • 1/2 TBSP grated shallots
  • 1/4 tsp kosher salt
  • 1/8 tsp red pepper flakes
  • dash of pepper

Instructions

  • Cook the shrimp scampi according to package instructions, remove from sauce and drain on a paper towel to cool.
  • Toss together the shrimp, arugula, spinach, pasta, asparagus, and parmesan.
  • To make dressing, shake together the lemon juice, vinegar, shallots, salt, pepper, and red pepper flakes.
  • Dress salad to taste.
