Fruit Pizza Recipe
Fruit Pizza is a great easy dessert that is always a crowd pleaser. Made with our simple sugar cookie recipe and favorite cream cheese frosting, this dessert recipe is bound to be a hit.
Servings: 12 people
Sugar Cookie Crust
- 2 1/2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 14 tablespoons unsalted butter room temperature
- 1 1/2 cups granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs
Cream Cheese Frosting
- 8 ounces cream cheese room temperature
- 4 tablespoons unsalted butter room temperature
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Fruit to Decorate
- 1 blackberry
- 12 strawberries sliced thin
- 1/2 cup blueberries
- 4 kiwi peeled and cut into half moons
- 1/2 cup red grapes cut in half
Preheat your oven to 350 degrees. Spray a 12 or 14 inch pizza pan with cooking spray and set aside.
In a large bowl mix the flour, baking powder, and salt together. Set aside.
In a large bowl using a handheld mixer or in the bowl of a stand mixer, cream the butter and sugar together until it is light and fluffy, about 3 to 6 minutes. Add in the eggs one at a time, then add in the vanilla extract.
Add the flour mixture. Turn the mixer on low and as soon as you are able to turn the mixer up without the flour flying out of the bowl, turn the mixer on high. Mix just long enough for the flour to be fully incorporated. Be careful not to over mix.
Spread the dough out onto the prepared pan. Bake for 20 to 25 minutes or until the edges begin to turn golden brown. Allow to cool 1 to 2 hours before decorating.
Cream Cheese Frosting
Cream together the cream cheese and the butter in the bowl of a stand mixer (or in a large bowl using a handheld mixer.)
Add the powdered sugar one cup at a time. Then add in the vanilla extract.
Spread evenly over the top of the cooled sugar cookie crust.
Place the blackberry in the middle of the fruit pizza. Then use five strawberrry slices to make a star pattern around it.
Add blueberries around the strawberry star. Add a row of kiwi slices. Around the kiwi layer the strawberry slices to make a ring.
Next, alternate grape halves and blueberries. Add another row of kiwi slices. Finally add more blueberries.
