  • 1/3 cup honey
  • 1/3 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 5 cups old fashioned oats (not quick cooking oats)
  • 2 cups pecans chopped
  • 2 cups golden raisins

  • Preheat your oven to 325 degrees.  Prepare a large baking sheet by lining it with parchment paper.
  • In a large bowl, whisk together honey, oil, brown sugar, vanilla extract, salt, and pumpkin spice.
  • Gently fold in the oats and the nuts.  Spread the mixture onto the baking sheet.  Bake for 45 minutes rotating the baking sheet half way though baking.
  • Remove the baking sheet from the oven.  Allow to cool for an hour.  Break apart the granola and mix in the dried fruit.  Store in an airtight container for up to two weeks.
