Ham Salad
This easy Ham Salad is a 10 minute recipe that is great on sandwiches, is delicious with crackers, and is perfect for using leftover ham!

- 1 pound cooked ham diced
- 2 hard boiled eggs chopped
- 1 celery rib diced fine
- 2 teaspoons onion finely chopped
- 1/2 tablespoon sweet relish
- 3/4 cup mayonnaise I used light
- 1 tablespoon mustard
- 1/2 teaspoon salt read instructions carefully about how to add
- 1/4 teaspoon black pepper
In a food processor, pulse the ham, eggs, celery, and onion together until everything is chopped fine but before it is a paste. (I find it best to process it for about 10 seconds, check on it, then pulse it until it becomes like a large crumb texture. See photo in the post.)
In a bowl whisk together the relish, mayonnaise, and mustard.
Add in 1/4 teaspoon salt, and 1/8 teaspoon pepper.
Stir together the mayonnaise mixture and ham mixture. Taste and add mor salt and pepper to taste. I used the full 1/2 teaspon salt and 1/4 teaspoon black pepper.
Serve with crackers or on bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
