Ambrosia Bread

Ambrosia Bread, like the salad, is easy to make and crazy delicious. Like a dessert, this is bound to become your favorite new quick bread.

Ingredients

  • 2 1/4 cups all purpose flour (281.59 grams)
  • 3/4 teaspoon baking soda (3.75 grams)
  • 1/2 teaspoon salt (3 grams)
  • 15 ounces mandarin oranges (425 grams) undrained
  • 6 tablespoons unsalted butter (85.05 grams) melted and cooled
  • 2 large eggs room temperature and lightly whisked
  • 3/4 cup sugar (150 grams)
  • 1 teaspoon vanilla extract (4.2 grams)
  • 1/2 cup chocolate chips (85 grams)
  • 1/2 cup maraschino cherries (80.5 grams) cut in half

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Spray a 9 by 5 inch loaf pan well with cooking spray.
  • In a large bowl, whisk together the flour, baking soda, and salt.

  • In a medium bowl, whisk together the mandarin oranges, cooled butter, eggs, sugar, and vanilla.

  • Add the chocolate chips to the dry ingredients and give them a light toss so they are coated in flour.

  • Gently fold the wet ingredients into the dry ingredients. Then mix in the cherries. Be careful not to overmix.
    1/2 cup maraschino cherries
  • Pour the bread batter into the prepared pan. Bake for 55 to 65 minutes or until a toothpick inserted slightly off-center in the bread comes out with just a few crumbs.
  • Allow the bread to cool in the pan for 10 minutes. Then remove and allow to cool on a cooling rack for 1 hour before slicing and enjoying.
