- 2 tablespoons olive oil
- 2 small yellow onions diced
- 4 garlic cloves minced
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 3 cups water
- 1 1/2 cups white rice
- 30 ounces black beans drained and rinsed
Add the olive oil to a large dutche oven over medium heat. Stir in the onions and the garlic. Season with the slat and pepper. Saute until the onions are transluncent, about 5 to 7 minutes.
Stir in the chili powder and the cumin.
Add the water, cover and bring to a boil. Stir in the rice and reduce to a simmer. Return the cover to the pot. Cook until the rice is tender, about 20 minutes.
Stir in the black beans and enjoy. Or top with additional ingredients like fresh tomatoes, cilantro, and corn.
