Green Beans Almondine

Ingredients

  • 1 pound green beans trimmed of rough stems and chopped into thirds
  • 3/4 teaspoon kosher salt (divided) if using table salt, use half this amount
  • 2 tablespoons unsalted butter
  • 1/4 cup sliced almonds
  • 2 garlic cloves minced

Instructions

  • Create an ice bath by filling a large bowl with water and ice cubes. Set aside.
  • Bring a large pot of water to a boil. Season with 1/2 teaspoon kosher salt. Add in the green beans and cook for 3 minutes. Remove the green beans quickly with a mesh strainer. Transfer them to the ice bath for a minute. Drain the beans and pat them dry.

  • In a large skillet, melt 2 tablespoons butter over medium heat. Stir in the almonds and garlic and cook for 2 minutes or until the almonds are golden brown.

  • Add the green beans to the skillet. Season them with 1/4 teaspoon kosher salt. Stir to combine and cook until they are tender, about 2 minutes. Add more salt to taste.
