  • Preheat your oven to 375 degrees Fahrenheit. Spray a 9-by-13-inch baking dish with cooking spray and set aside.

1 head broccoli, 1 head cauliflower
  • While they steam, melt the butter in a large skillet. Add the onion and the garlic. Season with salt and pepper. Cook until the onion is soft and translucent, about five minutes.
3 tablespoons unsalted butter, 1 small yellow onion, 2 garlic cloves, 1 teaspoon kosher salt, dash freshly ground black pepper
  • Whisk in the flour until the onion is coated and you can't see streaks of white. Slowly whisk in the milk and bring the mixture to a simmer. Cook for about one minute.
    3 tablespoons all-purpose flour, 2 cups milk
  • Add the broccoli and cauliflower to the baking dish. Then pour the creamy mixture over the top. Top with cheese and breadcrumbs.
2 cups shredded cheddar cheese, 1/3 cup breadcrumbs
  • Bake for 25 minutes, uncovered, or until the cheese is bubbling and begins to turn brown.

Notes

Milk: I used skim milk for this recipe, but milk with a higher fat content would also work great here.
