Line a rimmed baking sheet with aluminum foil and then place a wire rack in it. Set aside.
Pat the chicken dry and season with 1 teaspoon kosher salt and 1/8 teaspoon black pepper.

Combine the flour, salt, paprika, garlic powder, black pepper, and chili powder in a dish, whisking to combine. Pour onto a plate.

Whisk the eggs in a shallow dish.

Dip the chicken first in the eggs, coating fully. Then dip in the flour mixture. Dip the chicken back in the eggs and then back into the flour mixture. Transfer to the prepared wire rack in baking sheet and let rest for 5 minutes.
While the chicken is resting, heat the oil in a large skillet. Bring the temperature of the oil to 350 degrees Fahrenheit. Cook the chicken 2 at a time for 4 minutes on each side or until the chicken reaches 165 degrees Fahrenheit and is golden brown.
