Greek Salad

This simple chopped Greek Salad is bursting with freshness. It is made with just a handful of ingredients, but they pair together in the most magical way.

Ingredients

  • 1 English cucumber quartered and cut into 1/2 inch pieces
  • 1 green bell pepper deseeded and cut into 1/2 inch pieces
  • 4 Roma tomatoes cut into quarters and then cut into 1/2 inch pieces
  • 1/2 red onion cut into 1/2 inch pieces
  • 1 cup kalamata olives pitted and cut in half
  • 4 ounces feta cheese cut into 1/2 inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Greek oregano see note
  • 1/2 teaspoon kosher salt
  • dash freshly ground black pepper

Instructions

  • In a large bowl, toss the cucumber, bell pepper, tomatoes, red onion, olives, and cheese.

  • In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, oregano, salt, and black pepper.
    2 tablespoons olive oil, 1 tablespoon fresh lemon juice, 1 tablespoon red wine vinegar, 1 teaspoon Greek oregano, 1/2 teaspoon kosher salt, dash freshly ground black pepper
  • Toss the dressing with the other ingredients, serve, and enjoy.

Notes

Oregano from different regions do have different tastes, which is why this recipe specifically calls for Greek oregano. That being said, if you don't have it on hand or you are unable to find it, use what you have in your pantry. It will still be delicious.
