2 cups milk chocolate chips, 2/3 cup refined coconut oil
Microwave for one minute at 50% power. Stir very well and then cook in 30-second intervals mixing really well in between. Use the stirring of it to do a bulk of the melting. About a minute or a minute and a half, until fully combined. See note.
Once cooled, drizzle over cold ice cream.
Store the leftovers at room temperature for up to one month.
Refined Coconut Oil is the way to go here. It is neutral so it doesn't take away from the taste of the chocolate at all. Additionally, it is important to note that no other oil will work in this recipe, only coconut oil becomes a solid when it hits the ice cream.
Melting the chocolate and coconut oil should happen slowly with a lot of stirring in between intervals. If the chocolate gets over cooked, it will seize, become grainy, and the magic shell won't work the way you want it to.
