Mussels

Mussels are so easy to make with this simple recipe. Delicious mussels nestled in a creamy white wine sauce is the epitome of gourmet at home.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 shallots diced small
  • 4 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • dash ground black pepper
  • 1 cup white wine
  • 2 tablespoons lemon juice
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 pounds frozen mussels thawed (see note)
  • fresh parsley for garnish

Instructions

  • In a large skillet, melt the butter over medium-low heat. Add in the shallots, garlic, and red pepper flakes. Season with salt and pepper, and cook until the shallots are soft, about 3 to 5 minutes.

  • Add in the white wine, scraping up any browned bits. Stir in the chicken broth, heavy cream, and lemon juice. Bring the sauce to a low simmer.

  • Add the mussels, ensure that the heat is on medium-low, and cover. Let simmer for 3 minutes, stirring once. Discard any mussels that aren't open.

  • Top with parsley, serve. and enjoy.

Notes

Frozen mussels come pre-cooked and are perfect for this recipe. Simply thaw them the refrigerator overnight, or run them under wanter one at a time. Though they should be cleaned before cooking you may need to scrub off excess dirt and debris and pull off the beard, the small piece of fibrous material coming out of the mussel.
