Rotel Dip

This simple Rotel Dip is perfect to make for parties. It comes together easily and is always a huge hit!

Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion diced
  • 2 garlic cloves minced, optional
  • 2 pounds block processed cheese such as Velveeta, cubed
  • 20 ounces canned tomatoes with green chiles such as Rotel, two 10 ounce cans
  • 1 teaspoon chili powder optional

Instructions

  • In a large skillet over medium heat (see note), cook the ground beef, breaking it up, for 4 minutes. Add the onion and garlic, cooking for 5 minutes until the onion is soft. Drain the excess grease.

  • Reduce the heat to low and add in the cheese, tomatoes, and chili powder. Stir consistently until the cheese is completely melted.
    2 pounds block processed cheese, 20 ounces canned tomatoes with green chiles, 1 teaspoon chili powder
  • Serve warm with tortilla chips.

Notes

I used my 10.25 inch Lodge pan and it just fit perfectly as you can see. It holds roughly 9 cups.
