  • 1/4 cup unsalted butter 56.5 grams (melted)
  • 1/4 cup fresh parsley (6.25 grams) minced
  • 2 tablespoons fresh lemon juice
  • 1/2 tablespoon kosher salt
  • 1/2 teaspoon black pepper
  • lemons for serving

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Place heavy-duty aluminum foil on a baking sheet.
  • Place the thawed salmon on the foil.
    1 pound 8 ounces salmon
  • In a bowl, mix together the melted butter, 2 tablespoons parsley, lemon juice, salt, and pepper. Pour over the salmon.
1/4 cup unsalted butter, 1/4 cup fresh parsley, 2 tablespoons fresh lemon juice, 1/2 tablespoon kosher salt, 1/2 teaspoon black pepper
  • Fold the foil in on itself to create a pouch or foil packet around the salmon, rolling up the ends so that it is completely sealed.
  • Bake for 14 to 16 minutes or until the salmon registers 125 degrees Fahrenheit with an instant read thermometer (for medium rare).
  • Open up the foil, garnish with the remaining parsley and fresh lemon slices, cut and serve.

Notes

Buying Fresh Salmon:
  • buy from a store that has a lot of turnover so you can get the freshest salmon.
  • the salmon shouldn't smell fishy; it should look shiny and moist.
  • store it in the back of the refrigerator where it is coldest.
Buying Frozen Salmon:
  • thaw it in the refrigerator overnight before cooking.
  • cook it a little longer so it hits closer to 140 degrees Fahrenheit as this will give you the best taste and texture.
