Chicken Cobbler

This easy Chicken Cobbler has a creamy chicken and vegetable filling topped with a golden Cheddar Bay biscuit crust. Just 10 minutes of prep!

Ingredients

  • 2 cups chicken broth
  • 10.5 ounces condensed cream of chicken soup see note
  • 4 cups shredded chicken see note (500 grams)
  • 16 ounces frozen vegetables see note
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1/4 teaspoon black pepper
  • 11.36 ounce package Cheddar Bay Biscuit Mix
  • 2 cups milk
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter melted

Instructions

  • Preheat your oven to 375 degrees Fahrenheit. Spray a 9-by-13-inch baking dish with cooking spray. Set aside.
  • In a large bowl, whisk together chicken broth, condensed cream of chicken soup, garlic powder, onion powder, and black pepper.

  • Stir in the chicken and vegetable mix until well coated. Pour the mixture into the prepared baking dish.

  • In another bowl, combine the Cheddar Bay biscuit mix, the seasoning packet included, milk, and cheddar cheese. Spread over the mixture in the baking dish carefully. Do not mix in. Then gently brush with the melted butter.

  • Bake uncovered for 45 minutes to 1 hour or until the top is golden brown and the inside registers 165 degrees Fahrenheit with an instant read thermometer. Allow it to sit for 10 minutes before serving.

Notes

Condensed chicken soup: My recipe for homemade condensed chicken soup can be used as a replacement.
Cooked chicken: You need four cups of cooked, shredded chicken for this recipe. The easiest method is to use rotisserie chicken. Leftover chicken is another great solution. But you could also boil or bake chicken (you will need roughly 1.5 pounds of raw chicken). The chicken does need to be cooked before going into the casserole.
Frozen vegetables: Do not thaw the vegetables before adding them to the casserole. I used a combination of carrots, peas, green beans, and corn. But any frozen vegetable blend will work well.
