Cottage Cheese Egg Bites

Ingredients

  • 8 large eggs
  • 1 cup cottage cheese full fat
  • 1 1/2 cups cheddar cheese shredded, 6 ounces (170 grams)
  • 1/2 teaspoon kosher salt (if using table salt, use 1/4 teaspoon)
  • 1/8 teaspoon black pepper
  • 1 cup mix ins see note

Instructions

  • Preheat your oven to 325 degrees Fahrenheit. Spray a nonstick muffin pan, preferably a silicone muffin pan, with cooking spray and set aside.
  • In a blender, combine the eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until just smooth. While the mixture should look a little frothy, be careful not to overblend. Stir in any mix-ins.
    8 large eggs, 1 cup cottage cheese, 1 1/2 cups cheddar cheese, 1/2 teaspoon kosher salt, 1/8 teaspoon black pepper, 1 cup mix ins
  • Fill the muffin cups 3/4 full. Be sure that any mix ins are well distributed among the 12 egg muffins.
  • Bake for 25 to 30 minutes or until the egg bites are fully set.

Notes

There are a variety of mix-ins that would be delicious in this recipe. You can use vegetables (such as raw spinach, peppers, onions, and scallions), meat (such as cooked sausage, cooked and crumbled bacon, and cut-up ham steak), or herbs (such as chives, dill, or basil).
Please keep in mind that the nutritional information is based on no mix-ins.
