Cottage Cheese Egg Bites are perfect for breakfast on the run or a quick snack. Fast to throw together, easy to freeze, and made so many different ways, you will love these!

You might be surprised to know that I’m not always the best at making myself lunches and snacks from scratch. Even though I love creating recipes and have a wealth of them in my back pocket, sometimes I get too busy. That is why I love having things like these cottage cheese egg bites in my freezer. I know everything that is in them, I can control the flavor exactly the way I want to, and I can still keep them on hand for a quick snack.
Homemade Egg Bites Ingredients

- Cottage cheese: When blended with eggs, it gives these egg bites a moist, fluffy texture.
- Shredded cheese: For the best flavor, grate it yourself from a block.
- Mix-ins: From a simple addition of cheese to adding meat and veggies, they can be customized to whatever your family enjoys.

How to Make Egg Bites

Blend the Eggs
In a blender, combine the eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until just smooth; be careful not to overblend.


Stir in Any Mix-ins
Stir in your diced mix-ins to the egg mixture. I love to add diced cooked bacon and chives. Though this is pictured in the blender, be sure to just stir them in, not blend them.

Bake the Egg Bites
Pour the mixture into a muffin tin and bake until the eggs are fully set.

Tips and Tricks
- Make mini egg bites: If you want to make them, use a mini muffin tin. They will need less time in the oven since they are smaller.
- Mix-ins: There are a variety of mix-ins that would be delicious in this egg bite recipe. You can use vegetables (such as raw spinach, peppers, onions, and scallions), meat (such as cooked sausage, cooked and crumbled bacon, and cut-up ham steak), or herbs (such as chives, dill, or basil). Just be sure that in total you don’t add more than one cup of mix-ins.
- Egg Bites will deflate: Note that the egg bites will be really puffed up when they come out of the oven, but they will deflate to what you see pictured here. That is totally normal.
Storing and Freezing Egg Bites
Store any leftover egg cups in an airtight container in the refrigerator for up to four days. These cottage cheese egg cups make a great grab-and-go breakfast. Enjoy cold or warm them up in the microwave or air fryer. Always use your best discretion with leftovers.
You can also store these homemade egg bites for longer by freezing them. Allow them to cool and flash freeze them in a single layer for an hour. Then transfer the egg bites to a freezer-safe bag or container. Store in the freezer for up to three months. Reheat them by putting them in the air fryer or microwave.

Cottage Cheese Egg Bites
Ingredients
- 8 large eggs
- 1 cup cottage cheese full fat
- 1 1/2 cups cheddar cheese shredded, 6 ounces (170 grams)
- 1/2 teaspoon kosher salt (if using table salt, use 1/4 teaspoon)
- 1/8 teaspoon black pepper
- 1 cup mix ins see note
Instructions
- Preheat your oven to 325 degrees Fahrenheit. Spray a nonstick muffin pan, preferably a silicone muffin pan, with cooking spray and set aside.
- In a blender, combine the eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until just smooth. While the mixture should look a little frothy, be careful not to overblend. Stir in any mix-ins.8 large eggs, 1 cup cottage cheese, 1 1/2 cups cheddar cheese, 1/2 teaspoon kosher salt, 1/8 teaspoon black pepper, 1 cup mix ins
- Fill the muffin cups 3/4 full. Be sure that any mix ins are well distributed among the 12 egg muffins.
- Bake for 25 to 30 minutes or until the egg bites are fully set.

Could I replace cottage cheese with ricotta cheese? Higher calcium content for us older ladies!
I haven’t tested that, but I think it would work well.
