Cucumber Tomato Salad
This Cucumber Tomato Salad is the perfect easy summer side dish. It comes together with simple ingredients and a light dressing. This is delicious enough for entertaining but easy enough for a weeknight dinner.

- 3 vine ripened tomatoes cut into wedges and then thirds
- 1 English cucumber cut into 1/4 inch half moons
- 1/4 red onion sliced thin
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 tablespoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Combine the tomatoes, cucumbers, and onions in a large bowl.

In a small bowl whisk together the olive oil, vinegar, Italian seasoning, salt and pepper. Taste the dressing and add more salt and pepper to taste. 2 tablespoons olive oil, 1 tablespoon red wine vinegar, 1/2 tablespoon Italian seasoning, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper
Toss the dressing with the vegetables and enjoy right away. Store leftovers in the refrigerator for up to four days.
