Egg Roll in a Bowl

Ingredients

  • 2 tablespoons sesame oil
  • 1 pound ground turkey ground chicken, ground pork, and ground beef also work (453.6 grams)
  • 14 ounces coleslaw mix
  • 1/2 cup low sodium soy sauce
  • 1 1/2 teaspoons rice wine vinegar
  • 1 garlic clove minced
  • 1 teaspoon ginger minced
  • 2 green onions sliced, plus more for topping if desired
  • sesame seeds optional for topping
  • Sriracha sauce optional for topping

Instructions

  • Heat a large skillet over medium heat. Add the sesame oil and heat.

  • Add in the ground turkey and break it up to cook it. Once it has begun to brown, add in the coleslaw mix, soy sauce, vinegar, garlic, and ginger. Cook until the coleslaw is soft, about 8 to 10 minutes, stirring occasionally.

  • Stir in the green onions and serve. I love mine with a little Sriracha at the end.
