Gold Rush Cocktail
This Gold Rush Cocktail made with bourbon, honey syrup, and lemon juice is the perfect easy drink for sipping on the patio. It is refreshing and sweet, and bound to be a new favorite.

Servings: 1 cocktail
For One Cocktail:
- 2 ounces bourbon
- 1 1/2 tablespoons honey syrup see notes
- 1 1/2 tablespoons lemon juice
Combine the bourbon, honey syrup, and lemon juice in a mixing glass.
2 ounces bourbon, 1 1/2 tablespoons honey syrup, 1 1/2 tablespoons lemon juice
Stir to combine. Add in some ice, and give the cocktail a good stir.
Strain the cocktail into a small tumbler with a large ice cube. Garnish with a lemon slice and enjoy.
- To make honey syrup, combine 1/2 cup honey and 1/2 cup water in a small saucepan over medium heat. Bring to a boil and then reduce to a simmer. Continue cooking above five minutes until the syrup has thickened. Store leftover honey syrup in the refrigerator in an airtight container for up to one month.
- To use honey instead of honey syrup use 1 1/2 ounces of warmed honey instead.
