Greek Salad Dressing

Ingredients

  • 2/3 cups extra virgin olive oil see note (133.3 grams)
  • 1/2 cup red wine vinegar (120 grams)
  • 2 cloves garlic minced
  • 1 tablespoon dijon mustard
  • 2 teaspoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt or 1/2 teaspoon table salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder

Instructions

  • Combine all of the ingredients in a mason jar, put on the lid and shake well to combine.
    2/3 cups extra virgin olive oil, 1/2 cup red wine vinegar, 2 cloves garlic, 1 tablespoon dijon mustard, 2 teaspoons lemon juice, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1/2 teaspoon onion powder
  • Store in the refrigerator, sealed, for up to three months. Bring to room temperature before using.

Notes

If you like your dressing with a strong vinegar taste, cut olive oil back to 1/2 cup. If you aren't sure, make it with 1/2 a cup, and then add up to 2 tablespoons more at the end to your taste.
