Roasted Baby Potatoes Recipe

- 1.5 pounds unpeeled boomer gold creamer potatoes cut in half, see note 1
- 3 tablespoons unsalted butter melted, see note 2
- 2 cloves garlic minced
- 1 teaspoon kosher salt
- ground black pepper to taste
- fresh parsley optional
Preheat your oven to 425 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper and set aside. Whisk together the melted butter with the minced garlic, salt, and pepper.

In a large bowl, combine the potatoes with the butter mixture so they are well coated. Spread them on the prepared sheet, cut side down. (See note 3.)

Bake for 20 to 25 minutes or until the potatoes are fork tender. Sprinkle with fresh parsley, serve warm and enjoy.

- Any small type of potato will work for this recipe. Make sure that they are smaller than two inches and cut in half. For best results though, stick with creamer potatoes.
- To make this recipe dairy-free, use 3 tablespoons of olive oil instead.
- This recipe was originally written to bake in a casserole dish. However, depending on the size of the casserole dish, the potatoes were not fully cooked for some readers in the time listed. In this newer version, the potatoes cook perfectly in the time listed and get a little browned on the bottoms too, which is a nice addition.
