Our family loves this baby potato recipe so much. In fact, I have one kiddo who does fist pumps every time they see it land on the table. It is the perfect last-minute side dish recipe.
One of my favorite parts about this recipe is that it is simple enough to make for a weeknight meal, but delicious enough to put on your holiday table. These oven roasted baby potatoes are melt in your mouth delicious.

Ingredients for Baked Baby Potatoes
- Boomer gold baby creamer potatoes: Creamer potatoes are small and buttery, which makes them perfect for this recipe. Any small type of potato will work, such as baby Yukon golds, just make sure that they are smaller than two inches and cut in half. For best results, stick with creamer potatoes.
- Butter: Melted butter coats the potatoes, adding a rich, savory flavor and helps the potatoes develop a golden exterior as they roast.
- Minced garlic: Fresh garlic adds such a delicious, savory flavor to the potatoes.
- Salt and pepper
How to Make Roasted Potatoes

Prepare the Potatoes and Sauce
After cleaning and cutting the potatoes, melt the butter and whisk in the garlic. Toss the butter mixture with the potatoes to coat them in a large mixing bowl.


Bake the Potatoes
Spread the potatoes on the prepared baking sheet pan, cut side down. Bake for 20 to 25 minutes or until the potatoes are fork tender.

Roasted Baby Potatoes Recipe
Ingredients
- 1.5 pounds unpeeled boomer gold creamer potatoes cut in half, see note 1
- 3 tablespoons unsalted butter melted, see note 2
- 2 cloves garlic minced
- 1 teaspoon kosher salt
- ground black pepper to taste
- fresh parsley optional
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper and set aside.

Notes
- Any small type of potato will work for this recipe. Make sure that they are smaller than two inches and cut in half. For best results though, stick with creamer potatoes.
- To make this recipe dairy-free, use 3 tablespoons of olive oil instead.
- This recipe was originally written to bake in a casserole dish. However, depending on the size of the casserole dish, the potatoes were not fully cooked for some readers in the time listed. In this newer version, the potatoes cook perfectly in the time listed and get a little browned on the bottoms too, which is a nice addition.

Can I air fry these potatoes if I could what temperature and how many minutes thank you.
I’m sorry, I’ve only made these in the Instant Pot or in the stove. I would suggest 400 degrees for about 10 to 15 minutes and then toss them with the garlic, melted butter, salt, and pepper.

Can I make these ahead and reheat for a party? I need to make enough for 20 people.
Unfortunately, I’ve only ever made these right before serving. I’m sure they can be warmed up and enjoyed. I would imagine they will be delicious, just slightly less so than if fresh.

Thanks for the recipe. I cut my potatoes in half and put them in a ceramic dish and followed your instructions. I pre-heated, they have been in there 30 mins and are still not fork soft. I did them on a baking sheet and 25mins was good. Putting them on top of each other in a dish definitely increases the cooking time. Trying for 35 mins but other food is getting cold.

I made these last night and they were a hit. I usually roast them on a cookie sheet, but using a casserole dish was even better as the butter and garlic spreads and coated them much better. One of your other commenters said she would have to double the recipe next time and I absolutely agree!
