For Salad

  • 6 cups salad greens
  • 1 apple sliced
  • 1 small butternut squash (roasted - see my instructions in the post)
  • 1/3 cup craisins
  • 1/2 cup candied pecans
  • 2 cups cornbread croutons
  • 2 tablespoons Parmesan finely grated

Maple Vinaigrette Dressing

  • 1/3 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup maple syrup
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cinnamon

  • In a mason jar, combine all the ingredients for the dressing and then shake to combine.
  • In a large bowl, combine all of the salad ingredients. Toss to combine. Serve with the dressing on the side.

Please note that the serving size is based on this being a side salad, not a main dish.
