Ingredients

  • pizza dough (store-bought or homemade)
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1/3 cup ricotta cheese
  • 1/2 teaspoon dried thyme
  • 8 ounces fresh mozzarella sliced thin (see note 1)
  • 1/2 cup Parmesan cheese grated (see note 2)
  • 1/8 teaspoon red pepper flakes
  • fresh arugula optional

Instructions

  • Preheat your oven to 450 degrees Fahrenheit. For the best results, preheat a pizza stone while you are preheating the oven.
  • Roll out the pizza dough and place it on the preheated pizza stone or a baking sheet. Brush it with the olive oil and top with minced garlic.

1/3 cup ricotta cheese, 1/2 teaspoon dried thyme
  • Top with the sliced mozzarella. Finally, add the Parmesan cheese and the dried red pepper flakes.

Notes

  1. Look for a package of mozzarella that is listed "fresh mozzarella." It has a different texture than a block of mozzarella. It will be a solid ball, and you then slice it very thin.
  2. I highly recommend buying a block of Parmesan cheese and shredding it for the best results.
