To cook the chicken, place 2/3 pound of boneless skinless chicken breasts in a baking dish. Rub the breasts with 1/2 tablespoon olive oil, 1 teaspoon kosher salt, and 1/8 teaspoon black pepper. Bake at 375 degrees Fahrenheit for 30 to 40 minutes or until it registers 165 degrees Fahrenheit with an instant read thermometer. Read alternatives for cooking the chicken yourself in the post.
In a large bowl combine the lettuce, chicken, croutons, cheese, and dressing. Toss to combine so the dressing coats everything well.
2 cups chopped Romain lettuce, 2 cups cooked chicken, 1 cup croutons, 1/2 cup freshly grated Parmesan cheese, 1/2 cup Caesar dressing
Place the tortilla shells on a large workspace, like a large cutting board.
4 9-inch flour tortillas
Place a heaping cup of the mixture in the middle of each of the tortillas.
Fold in the ends about 2 inches, and then roll up the wraps. (See photos in the post.) Enjoy right away or take to work for a perfect lunch.

This is also a great recipe to use leftover chicken or rotisserie chicken if you want to skip baking chicken.
