Meatloaf Sandwich

If you have leftover meatloaf, this meatloaf sandwich is the best solution. Made with simple ingredients that compliment the meatloaf perfectly, you will love this delicious take on a grilled cheese sandwich.

Ingredients

  • 8 slices sourdough bread see note
  • 2 tablespoons mayonnaise
  • 4 slices meatloaf
  • 4 slices cheddar cheese provolone and Swiss work great as well
  • 2 tablespoons BBQ sauce
  • 1/4 cup butter room temperature

Instructions

  • To construct the sandwiches, place 4 slices of bread on a cutting board. Spread 1/2 tablespoon of mayonnaise on each slice. Top each with a piece of meatloaf. Then place a slice of cheddar on each one.
    8 slices sourdough bread, 2 tablespoons mayonnaise, 4 slices meatloaf, 4 slices cheddar cheese
  • Place the remaining four slices of bread on the cutting board. Spread 1/2 tablespoon of BBQ sauce on each one. Place the bread, BBQ side down, on top of the cheddar slices to complete the sandwiches. Spread butter on the 2 outer sides of the bread on each sandwich.
    2 tablespoons BBQ sauce, 1/4 cup butter
  • Heat a skillet over medium-low heat. Place the sandwiches in the pan and cover. Cook the sandwiches for 3 minutes. Flip the sandwich, recover, and cook for 3 more minutes. Serve and enjoy!

Notes

I like to cut my bread to fit the meatloaf. As you can see in the photos, we actually only used one slice of sourdough per sandwich because the bread we had was big and each slice cut in half was perfect.
