Last night one of my kiddos was reading me a book, “My Working Mom.” (Eeeek, right?)

And in the book, the kid says, “Sometimes I think my mom loves her work more than me.” Her mom’s a witch and can turn people into frogs, so honestly, kid? Who wouldn’t love that?

Anyway.

I hesitantly turned to kiddo and said, “Do you ever feel that way?”

And kiddo turns to me and says, “No! I mean, you love your work for sure, but you love us too!”

You guys, it felt like the biggest win of all wins. All working moms out there (a redundancy if there ever was one) are cheering with me.

So, I decided to make a super easy recipe – because it is true, I love my work, but I also love making things easy for you and me both. You know those fluff recipes out there? They are full of Cool Whip, fruit and other goodness that turn them into a fun summer picnic side. Well this recipe is just like that but with the addition of cream cheese, turning it into a super fun dip!

WHAT IS IN STRAWBERRY FLUFF DIP?

  • Cool Whip  I am going to get people telling me they will use real whipped cream. Go nuts. However. It won’t hold up sitting out the same way cool whip does. Consider making your own cool whip.
  • Cream Cheese  Make sure you have it at room temperature for easy blending.
  • Fresh Strawberries
  • Strawberry Jello Mix You just want to use a little of the dry mix, you aren’t making the actual jell-o.
  • Vanilla Extract

Can you believe how simple that is??

Dessert dips are my favorite addition to parties. They usually are so super simple to make, require no fancy ingredients, and they are always a hit! As I am sitting here writing this post I’m literally coming up with dozens of dessert dips to make for you guys. Hmmm . . . . a third blog solely dedicated to dip?? Just kidding.

I made this for my family & they loved it- including my picky daughter. I did 1.5 cups strawberries and chose 1/3 fat cream cheese. I wondered how this would be different compared to whipped strawberry cream cheese, and this is much sweeter and had a softer creaminess to it. This is definitely more dessert- like; I wouldn’t choose to put it on a bagel. My daughter wants to try it on ice cream (of course she does!) and I think this would be a great topping.

Everyone like the uniqueness of this with the jello flavor, and probably closer to the “pink fluff” flavor you get with strawberry party trays at the store. I’m going to decrease the amount of jello powder next time, to see if it will have less of a “candy” taste- it would appeal to me more- and maybe lighten the color also- it is SOO pink!! One recommendation: this really should be made in advance so that the flavors are better blended together – even softened cream cheese requires some effort to blend well with the cool whip consistency -and then the jello “powder” is not so gritty (everyone in my family found this to be off- putting). It was much better when we had the leftovers. I was also worried about the juice from the strawberries in this being a problem the next day, but bc everything else had firmed up, I needed to set it out of the fridge for a while before I could “fold it” again, so it wasn’t. I did add a bit of fresh strawberries to the leftovers- without it, the fruit taste was nearly gone. I think next time (I will make this again), I’ll also try adding strawberries that are larger pieces (mine were almost diced). This a fun, easy, quick, and kid friendly option for entertaining that can have alot of variations to suit your preference. We used graham cracker sticks for dipping (helped counter the intense sweetness) and I think we’ll try van. wafers next time and compare the flavor combo. Thanks for posting this!!
