For the Enchilada Sauce • Olive Oil • Yellow Onion • Kosher Salt • Cumin • Chili Powder • Flour • Tomato Sauce • Chicken Stock • Garlic For Casserole • Chicken • Salt • Black Pepper • Green Chiles • Black Beans • Tortillas • Colby Jack Cheese

Make the enchilada sauce.

Make the filling by combining shredded chicken, salt, black pepper, diced green chiles, and drained black beans.

Layer the casserole by dipping the tortillas in the sauce and place at the bottom of a baking dish.

Put half of the chicken mixture over the tortilla layer. Top with cheese. Repeat the process and bake.
