This delicious cabbage roll casserole takes all the great taste of cabbage rolls and puts it in a simple casserole. Your family will love this comforting dish.

Casseroles are some of my favorite comfort meals, and this one is no exception. I love many things about this recipe, the first being how delicious it is. But I also love that it can be made ahead, it is totally dairy-free, and it involves just a little bit of prep.

How to Make Stuffed Cabbage Casserole

Here is a brief overview of how this stuffed cabbage roll casserole recipe comes together. It has the delicious flavors of cabbage rolls in an easy-to-make casserole. For the full recipe, including all ingredients and their measurements, scroll to the recipe card at the bottom of the post.

Cook the Ground Beef

Break it up as it cooks, then add the garlic and onion and cook until tender. Drain off any excess grease when the onions are done cooking.

Combine Casserole Ingredients

In two large bowls, combine the beef mixture with the chopped green cabbage, tomato sauce, rice, parsley, salt, dill, and pepper. Mix well to combine and then put in the prepared baking dish. If you have a really big bowl that could fit everything with room to stir, you could do this in one bowl.

Bake the Casserole

Pour the beef broth over the casserole and bake for an hour, or until the rice is fully cooked. Serve with sour cream and enjoy!

Tips and Variations

  • Swap the ground beef: If your family prefers ground turkey, ground chicken, or ground pork, you can swap the ground beef for one of those options.
  • Making ahead: To prepare this easy stuffed cabbage casserole ahead of time, prepare it according to the recipe, but instead of baking, cover tightly with plastic wrap or aluminum foil and refrigerate for up to 24 hours. When ready to bake, remove the plastic wrap or foil and bake for an hour, or until the rice is done.

Storing and Reheating Leftovers

Store any leftover casserole in an airtight container in the refrigerator for up to three days. Reheat only the portion you plan to eat in the microwave or oven until heated through.

Cabbage Roll Casserole

This delicious cabbage roll casserole takes all the great taste of cabbage rolls and puts it in a simple casserole. Your family will love this comforting dish.

Ingredients

  • 2 pounds ground beef
  • 1 medium yellow onion diced
  • 2 garlic cloves minced
  • 3 pounds chopped cabbage
  • 29 ounces tomato sauce see note 1
  • 1 cup uncooked white rice
  • 2 teaspoons dry parsley
  • 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
  • 1 teaspoon dry dill
  • 1/4 teaspoon black pepper
  • 1 3/4 cups beef broth

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Spray a 9 by 13 inch baking dish with cooking spray and set aside.
  • In a large skillet, cook the beef, breaking it up. Once broken up, add the onion and garlic. Cook for 5 to 7 minutes or until the beef is cooked. Drain the excess grease.
    2 pounds ground beef, 1 medium yellow onion, 2 garlic cloves
  • In 2 large bowls, combine the beef mixture with the chopped cabbage, tomato sauce, rice, parsley, salt, dill, and pepper. Mix well to combine and then put in the prepared baking dish. I like to do this by dividing the ingredients between 2 bowls, mixing them, and putting them both in the casserole dish. But you could also do it in batches in 1 bowl.
    3 pounds chopped cabbage, 29 ounces tomato sauce, 1 cup uncooked white rice, 2 teaspoons dry parsley, 1 1/2 teaspoons kosher salt, 1 teaspoon dry dill, 1/4 teaspoon black pepper
  • Pour the beef broth over the casserole. Cover and bake for 1 hour. Stir, re-cover, and then return to the oven for 30 to 40 minutes or until the rice is fully cooked. Serve with sour cream.
    1 3/4 cups beef broth

Notes

  1. You are looking for canned tomato sauce that is simply cooked tomatoes that have been deseeded and pureed. You are not looking for a pasta sauce.
