You guys, you know how I don’t often tell you what to do, but I’m going to today.

You HAVE to make this easy cheesy taco boats recipe. Why? Because it’s miraculously good. It was this easy recipe for tacos that resulted in my super picky four year old declaring it the best day ever and the best dinner ever.

Right??

So this meal is like STOP THE PRESSES good.

Old El Paso Soft Tortilla Taco Boats

The taco dinner is made using Old El Paso Mini Soft Tortilla Taco Boats. They are so absolutely perfect for mini hands. Or appetizers. Or eating a dinner made out of appetizers, which pretty much makes them perfect for me. I love Old El Paso so hard. Their fat free spicy refried beans are my jam. I pretty much lived on them in college. Like a burrito made with those beans in my quiet apartment was pretty much the highlight of my busy day my senior year. And their pickled jalapeños? Don’t even get me started. I want them on all.the.things.

How to Make Easy Cheesy Taco Boats

Start with some Old El Paso Spicy Fat Free Refried Beans (you don’t have to say that seven times fast, but if you do, it will take you more time than this recipe). Spread a little (maybe a tablespoon) in the bottom of each shell.

Add some Slow Cooker Taco Chicken, because it is totally amazing. You absolutely can make the chicken the night before, store it in the refrigerator and then put together the taco boats right before throwing them in the oven!

Throw about a tablespoon of shredded Mexican cheese on each one.

You bake them for 10 minutes and then you top them any way you like!

Funny story. So my kids like things PLAIN because they are their dad’s children. But I decided for this taco night to put out some taco fixn’s on the table. They put some olives and tomatoes on their taco boats and declared it the best day ever. Seriously. They looked at me and said, “Mom. Why don’t you normally put these things out for taco night?? It’s so much better with toppings.”

OMG.

I fell out of my chair and then went on a tirade about how they REALLY need to listen to me more often.

Easy Cheesy Taco Boats

Ingredients

  • 12 Old El Paso Mini Taco Boats
  • 1 can of Old El Paso Spicy Fat Free Refried Beans
  • 1 recipe of Slow Cooker Taco Chicken see note
  • 3/4 cup of Mexican Cheese
  • Shredded Lettuce Diced Tomatoes, Olives, Jalapeños and whatever else you like on your tacos

Instructions

  • Preheat your oven to 350 degrees
  • Put about a tablespoon of Old El Paso Spicy Fat Free Refried Beans in the bottom of each taco boat. Top with chicken and then about a tablespoon of cheese.
  • Bake on a cookie sheet for 10 minutes or until the cheese is melted.
  • Top with desired taco toppings
