Okay, just a quick story today, and then I’m going to go back to watching Marquette trounce Miami. (I’m a fair weather fan if there ever was one.)
It was Christmas of 2010. We had suffered the loss of our sweet little Elliot just three months earlier, and we were still, in many ways, mourning the loss of my mom, with the third anniversary of her death just a few days earlier.
Things were rough.
But! On Thanksgiving of that year, we learned that we were pregnant with our third baby. On Thanksgiving! Talk about giving thanks. We quietly kept it a secret, partially because we were so nervous, and partially because we didn’t want to put our families through more loss should I not be able to maintain the pregnancy.
But shortly before Christmas we had an ultrasound and we saw a heartbeat! A strong little brave heartbeat in our little grain of rice that gave us hope and gave us strength and convinced us to share our good news.
We were celebrating Christmas with my family at our house, and my dad was the last one to get there. I love the man, but seriously, dude. You are the only one without tiny humans you are in charge of. How are you never on time?? Anyway, my dad walked in carrying a bottle of chocolate wine.
And pretty much as soon as he walked in the door I wanted to announce the pregnancy. I told my family I had a really cute picture of our kid to show them, and expecting to see yet another picture I had taken of my photogenic Gavin, they half paid attention while they took off coats, changed a diaper, and settled in.
And then I whipped out the ultrasound pictures.
They gave me the exact reaction I would hope for. They cried, they hugged, they seemed absolutely overwhelmed with joy.
And then my dad said, “We have to make a toast!!” And he ran to the kitchen to pour the chocolate wine. Counting glasses, he took out the exact number of glasses as there were adults. And I looked at him sort of dumbfounded saying, “Ummm, none for me.”
My dad: “You don’t want any? It’s really good!”
Me: “Dad . . . . I’M PREGNANT!!”
So whenever I see chocolate wine, I will think of that day. And smile.
And when I saw the chocolate wine in the store the other day, inspiration struck. I had some Rolo infused vodka just waiting to be turned into a delicious martini. And delicious this is! It is an absolute desert, make no mistake about it.
The Rolo infused vodka was good, though next time I think I will use regular sized Rolos so that I get more of the caramel flavor. They didn’t dissolve completely, but they made the vodka soooooo delicious. You could definitely drink it on it’s own over ice.
Or you could make this.
Rolo Chocolate Martini
- 1/4 cup Rolo infused vodka (recipe below)
- 1/4 cup chocolate wine
- 1/4 cup fat free half and half
- Combine the vodka, wine, and half in half in a martini shaker over ice. Shake, pour, enjoy.
- Top with whip cream and shaved Rolos to make extra decadent.
- 1/4 cup chopped Rolos
- 8 ounce mason jar
- Put the Rolos in the jar and fill the rest of the way with the vodka. Shake daily.
- After about a week, strain.
