This simple and delicious homemade waffle recipe is going to go on weekend repeat in your house. A crisp exterior with a fluffy interior, this simple breakfast recipe is a win.

My family currently lives a bit of an insane schedule where all three of our kids leave for school at different times. Three different schools with three different start times mean three different breakfast times, the first of which is at the eye-bleary time of 5:50 a.m. That means weekdays are fast breakfasts and breakfasts that can be eaten on the go.

But the weekends are the time we shine. My kids absolutely love waffles for breakfast, and we love how easy they are to whip up. This delicious and easy recipe is perfect for a weekend brunch. Unless your family lives a normal schedule, and then they totally work for the weekdays!

Waffle Ingredients

  • Flour: We use all purpose flour to make these delicious waffles. I recommend weighing the flour for best results, but if you don’t own a kitchen scale, follow my recommendations in this post: How to Measure Flour.
  • Baking Soda: Keep in mind that this recipe calls for baking soda and should not be replaced with baking powder.
  • Milk: I use skim milk in this recipe, but a higher fat milk would also work.
  • Sour Cream: This is an important ingredient in this recipe as it will activate the baking soda.
  • Granulated Sugar: The small amount of sugar in this recipe is great to add just a hint of sweetness.
  • Butter
  • Table Salt
  • Eggs
  • Vanilla Extract

How to Make Waffles

Here is a brief overview of how this easy waffle recipe comes together. For the full recipe including all measurements, scroll to the recipe card at the bottom of the post.

Combine the Dry Ingredients

Whisk together the flour, baking soda, and salt in a large bowl.

Combine Wet Ingredients

In a medium bowl whisk the eggs. Then whisk in the milk, sour cream, melted butter, sugar, and vanilla.

Mix Wet and Dry Ingredients

Stir the wet ingredients into the dry ingredients until they are just combined. Let the waffle batter sit for about three minutes.

Cook the Waffles

Cook the waffles according to the instructions of your waffle maker.

Tips and Tricks

  • Make sure your baking soda is fresh. Baking soda needs to be replaced every six months to ensure it is active. To test yours, mix a little baking soda with vinegar. It should bubble up right away, if it doesn’t it is time to replace it.
  • Measure your flour correctly. Whisk the flour in its container and use a spoon to scoop it into the dry measuring cup and level it off. See more detailed steps and photos in my tutorial.
  • Let your butter cool. You want the butter to be melted, but let it cool slightly before adding it to the batter or it will start cooking the eggs in the batter.
  • Use a great waffle maker. I love this one.
  • Keep them warm. Since you will only be making one waffle at a time, I recommend keeping the others warm in your oven while you continue cooking. Set your oven to warm or 200 degrees Fahrenheit. Put a wire cooling rack on a baking sheet and put the cooked waffles in a single layer in the oven until you are ready to eat or serve them. This will keep them warm and prevent them from getting soggy.
  • Grab some great toppings. Of course you can use butter and maple syrup. But we also love strawberry syrup. Nutella, chocolate chips, and fresh fruit are big hits in my house too. And naturally we love using whipped cream.

Storing and Reheating Leftover Waffles

Rather than storing extra batter that you won’t use, I recommend making all of the batter into waffles and storing the cooked waffles. They can be kept in an airtight container in the refrigerator for up to three days and enjoyed cold or reheated in the toaster or air fryer.

If you want to freeze waffles, allow them to cool and put them on a baking sheet in the freezer for an hour. This will flash-freeze them so they don’t stick together. Then transfer the frozen waffles to a freezer-safe bag or container and freeze for up to three months. Reheat them in the toaster or air fryer when ready to enjoy! This makes it so easy to grab one on a busy morning.

Easy Waffle Recipe

Ingredients

  • 2 cups all purpose flour (240 grams)
  • 1 teaspoon table salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1 cup milk (227 grams or 236.6 ml)
  • 1/2 cup sour cream (113.5 grams)
  • 4 tablespoons unsalted butter melted and slightly cooled (56.5 grams)
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  • In a large bowl whisk together the flour, salt, and baking soda. Set aside.

  • In a medium bowl whisk the eggs. Then whisk in the milk, sour cream, butter, sugar, and vanilla.
    1 cup milk, 1/2 cup sour cream, 4 tablespoons unsalted butter, 2 tablespoons granulated sugar, 1 teaspoon vanilla extract, 2 large eggs
  • Whisk the wet ingredients into the dry ingredients until they are just combined. Let the batter sit for about 3 minutes.
  • Cook the waffles according to the instructions of your waffle maker. (For a 6.5 inch waffle maker, you will need 3/4 cup batter per waffle.) Serve and enjoy. (See note about keeping waffles warm.)
