  3. Lynne says

Do you have any recepies for serving one or two ?

    • Lisa Longley says

Sorry, Lynne! As a mom of three I don’t typically make recipes for 1 or 2, but you can adjust all of my recipes right on my website and it will give you the measurements for smaller portions. Also, there are a lot of dinner recipes that freeze very well. My favorite for frozen leftovers is this Italian Beef. You could freeze it in individual portions.

I have never liked sweet potatoes but decided to make these for my hubby. Wow! It was a big mistake because I should have made more. They are delicious.

    • Lisa Longley says

So happy you liked them Sharon!

  5. Cheyanne says

I am looking to cook these at the same time as a meatloaf. Which needs to be in at about 375 degrees. How long do you think these would take at that temp?

    • Lisa Longley says

Yes, but they will need more time.

  6. Annette says

Did these come out a little crispy or were they soft?

    • Lisa Longley says

The outside is a little crisp, and then the inside is soft.

  7. Robin Sims says

This recipe sounds delicious! Can’t wait to try it. I was thinking of adding some citrus flavor. Orange or lemon? Zest or juice? Any ideas on how much?

    • Lisa Longley says

Hmmmm, if you want to try that, I would go small the first time. Like maybe a teaspoon of juice. Taste it after baking if you still want more, add just a little zest on the top.

      • Robin says

Great idea. I’ll try it and let you know. Making my list for Thanksgiving. I do believe this recipe will be served.

Very good recipe. But 5 minutes prep time? It took me 20 minutes to peel and dice the potatoes. Another 5 to line the cookie sheet with tin foil.
So 25 minutes prep is more realistic. But the results were worth it.
    Thank you
    ????

    • Lisa Longley says

My only defense of the 5 minute prep time is that it calls for potatoes that are peeled and cubed already. So when I start with peeled and cubed potatoes, I can get this in my oven in five minutes. Now. That is a terrible defense. ????

This is now my favourite way to eat sweet potatoes.. wait till I bust these out at Thanksgiving, while socially distancing of course :)

      So glad you liked them!

Omg. These are fantastic. Cooking them right now. I did take a sample one and WOW what flavor. I too have to much butter because I had more than 2 sweet potatoes. But heck, super sauce.

      So glad you like them!
