These Cake Batter Truffles are made in the microwave! And so so so yummy! Good luck only eating one!

My husband sometimes hates that I blog.

Mainly because he knows that any ridiculous thing he says or does has the potential to be written about or photographed and shared with the whole inter webs.

He lives in fear.

As he should.

So . . . .

Just the other day, my dear amazing loving husband (who probably should stop reading this post here so that he still wants to share a bed with me) went to pick up sushi for me for dinner! Yay! It was really the best kind of night. The kids were in bed, I was sipping wine, and my husband was headed home with sushi so we could watch winter premier of Scandal together. #winningatlife

He has been gone awhile, but not like an unusually long time, when my phone rings.

It’s my dear loving husband (who seriously should stop reading) and he is apologizing for how long it took him.

Now. This seems odd.

First, it hasn’t been all that long . . . and second, well, if I had complained about how long it had taken for him to get home with my sushi, he probably would have shoved my California Roll in an unsavory location.

So after he kind of ignored me saying it was weird that he apologized for how long it took, he went on to talk about this group of women who came into the sushi restaurant while he was waiting for our order and started retelling me all the things that they said to him . . . . I got the fuuuuuuulllllll play by play.

Ah. It has all become clear.

“Soooooo, you were actually just calling to let me know that you got flirted with.”

“Maybe.”

“I’m sooooooo blogging about this.”

Dial tone.

Guess what’s more adorable than a husband who’s bragging about moms in their 30s flirting with him?

Cake Batter Truffles!

These little guys are SO easy to make! You just pop the ingredients into the microwave, do a little stirring, a little chilling, a little rolling, and then a lot of eating! Yummy! These were so good in fact, that they barely made it through the photo shoot! When I finally let my kids eat them, they popped them in their mouths and then exclaimed through very full mouths, “HOUONOGY!” Translation:  YUMMY!

Cake Batter Truffles

(tap # to scale)

Ingredients

  • 10 oz white chocolate chips
  • 1/3 cup heavy cream
  • 2 TBSPs cake mix
  • rainbow sprinkles

Instructions

  • In a microwave proof bowl, combine the chocolate chips and the heavy cream. Microwave one minute at a time at half power, stirring in between, until it is smooth and fully combined. Be careful not to over microwave. If you pull it out and it is almost combined, just keep stirring.
  • Stir in the cake mix.
  • Cover and refrigerate overnight.
  • Using a small spoon, scoop out spoonfuls and roll them into balls and then into the rainbow sprinkles. Be sure to press the sprinkles into the truffles to prevent them falling off. Store in an airtight container in the refrigerator for three days.

That is hilarious. But your husband has a honest soul. And I’d exchange some mild flirting for sushi any day. Sushi and wine is the best dinner.
And this is the best dessert! So easy! And I love putting the mix in there. So smart!

    • Lisa Longley says

Thanks Mir! Don’t tell my husband, but I love it when strangers flirt with him. It puts him in such a good mood, lol. And he’s such a hottie that it happens a lot :)

Oh my, cake batter truffles. Oh yes, I love cake batter anything, so I’m bookmarking these bad boys for later!

Too funny about the hubby bragging that he’s still got it… men! The giant man-baby does that. He’s a MILF magnet! *cackles* I wonder if he reads the comment section too, heh.

    • Lisa Longley says

Now now, I’m the only one who gets to call him a giant man baby :) Thanks for sharing!

      • Lisa | Sweet 2 Eat Baking says

Ha! The giant man-baby is the nickname I’ve used for my fella for years, I was referring to my SO sharing his flirting adventures too. :)

Oh, don’t mention sushi. Makes my tummy turn pin wheels. I had tried it some years ago and I got so sick that I will never, ever eat it again. Just the thought of it makes my tummy turn. I think at the time it was a touch of food poisoning. Was down for a week. Wasn’t shortly after being feeling better that the place closed up.

The Cake Batter Truffles look so yummy and like the easiness of the recipe but was just wondering………about how many does this recipe make?
    Thank you

    • Lisa Longley says

Oh no! I’m so sorry sushi was ruined for you. It is one of my favorites :) This recipe makes about 20 give or take.

  5. Dorothy @ Crazy for Crust says

Hahaha!! That is so funny. Mel would murder me if I told that story!!

    • Lisa Longley says

There may or may not have been threats of murder, Dorothy :)

  6. Steph says

If I have an inpatient husband who really wanted me to make these quickly, would putting the batter in the freezer for an hour or so suffice instead of the fridge overnight? If not, I don’t mind him being tortured ;)

    • Lisa Longley says

Hahahaha Steph! He’s going to need to be tortured. I wouldn’t freeze it :)

  7. Patricia Ryan says

Is there only 2 TBS of cake batter ?? Doesn’t seem like much to make 20 truffles. Thanks

    • Lisa Longley says

      Yup, just 2 TBSPS.

  8. lisa says

Hi, what do you mean by cake batter? Thanks x

    • Lisa Longley says

I mean they taste like cake batter . . .

  9. Ruthie says

    What flavor cake mix?

    • Lisa Longley says

You can use any, I used funfetti. Obviously, it will flavor then like the flavor of cake you use.

  10. Melissa says

I am wanting to make these for a bake sale. Can they stay on refrigerated (indoors) in a plastic baggie for 24 hours?

    • Melissa says

      Sorry, supposed to say un-refrigerated!

    • Lisa Longley says

As long as you aren’t storing them in a room like a sauna they should be good to go! ;)
