This Bailey’s Fudge is easy to make, tastes absolutely delicious, and is the perfect amount of rich amazingness!

You guys.

The most embarrassing thing happened to me the other day.

So I was at Target looking for cookie cutters shaped like ninjas because, I mean, why wouldn’t I be doing that on a random Tuesday night?

Side note, they are for a Christmas post that is coming your way soon ;)

In front of a bottle of Bailey's, a stack of Bailey's Fudge topped with chopped up Andes chocolate

I was walking around listening to my podcast and shopping, which has become my newest and very favorite pastime #nerdpastimes, and I guess going there I just assumed that ALL the Christmas stuff would be out. I mean, I’m working on all my Christmas posts, so it stands to reason that Target would have all their partridges in pear trees in a row . . . . that was supposed to be like ducks in a row . . . I sense it fell flat . . .

Anyway!

So, their Christmas stuff is not in fact all out as I thought it would be, but there were a bunch of guys opening boxes and putting it out. Given that shopping trips alone to Target are more rare than my house being clean and going with the kids makes me want to stab myself in the eye with all the plastic spoons Target has to offer . . . I thought I should just go and ask them about it. I mean. There had to be some ninja cookie cutters in those unpacked boxes. #firstworldproblems

So I ask one of the guys about it and made a joke about something because obviously I’m hilarious and need to show that to everyone all the time . . . . and you guys. I think he thought I was flirting with him! All of the sudden he worked into the conversation that he is married. You guys. It wasn’t a conversation. I was asking about cookie cutters!

All of the sudden it occurred to me “OMG. He thinks I’m flirting with him!!!” And as the thought occurred to me, approxiatmely 0.2 seconds after he mentioned his wife, my face went BEET red. Which I’m sure was really further evidence that for him that I was the most desperate of housewives. I was dying. I am not even kidding when I tell you that I seriously considered explaining to him, much in the same way that I have done here with you, dear wonderful strangers of the whole inter webs.

But then he quickly told me he didn’t have the cookie cutters and I swallowed what was left of my pride, hung my head, and high tailed it to the baking section where I promptly bought them out of chocolate chips, Ande’s pieces, and all the sweetened condensed milk I could get my hands on.

I already had Baileys.

#duh

And here, you have the Bailey’s Fudge bought from that fateful night, lol.

It is phenomenal, delicious, and so ridiculously easy. This fudge is perfect for gift giving because it is so insanely easy to make. And it is totally addictive. I made a video for this post (YAY!! . . . Other side note . . . did you know that you really get shown only like 1% of what I post on FB if you don’t interact with the posts . . Facebook loves showing you videos though, that’s why so many food bloggers you love have been doing them.) and because of that and the needs for a pan to make, a pan that was done . . . and a video retake that required ANOTHER pan, I literally have so much of this fudge.

And I’m okay with that :)

This fudge is fine out of the fridge, but if you want it to be very firm I would keep it in there. Enjoy peeps!

EDITED TO ADD: I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.

  • Cover and refrigerate for four hours until firm. For firmer fudge store in the refrigerator.

Notes

I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.
Please do not use the entire 14 oz can of Sweetened Condensed Milk in this recipe. Be sure to pour it into a glass measuring cup and only use 1 cup or 8 liquid ounces. Using a brand name ensures better results, and mixing up the can before measuring out the 8 ounces also helps.

Mine came out great. I did measure out 1/4 of a cup of Bailey’s and poured it into a half cup measuring cup and then poured just a bit more in but not a full half. Sat up fine. I measured out 1 cup of the sweetened condensed milk. I did only have a 8X8 pan and it was too thick, still sat up firm but was too thick. My fault but will make it again. Great recipe. Thanks!

Hi, I made last night and put in fridge and freezer and this am it still didn’t set? I used the amount of liquid in the recipe? Any thoughts?

    • Lisa Longley says

Is there any chance at all you used evaporated milk? That is all that I can think, because this recipe has been made so many times, I know it works.

Is this too boozy for children? My grands love fudge and I have been looking for a quick, easy and yummy fudge recipe. Thanks.

    • Lisa Longley says

I personally wouldn’t let my kids eat this recipe, that said, if you make this with 1/4 cup Baileys and cut it into 36 pieces there is about 1/3 of a teaspoon of Baileys in each piece. You could also make them this Easy Fudge Recipe I published yesterday! And that post has a lot of other non-boozy versions linked in it.

Andes baking chips seem to be hard to find. I went to Amazon and found 3 different kinds: Crème de Menthe Chocolates Mint Baking Chips; Crème de Menthe Baking Chips and Peppermint Crunch Baking Chips.

Which am I supposed to use???????

    • Lisa Longley says

I think either of the first two would be good.

Made this with 1/2 c of strawberry and cream Bailey’s and they turned out great! This will definitely be my goto recipe.

    • Lisa Longley says

So glad to hear this, Dee!

  7. Terry Leigh Cornish says

I live in Canada – what is Andes baking chips? what can I use instead of that?

    • Lisa Longley says

Andes baking chips are basically cut up Andes candies – little mint chocolate candies. You could replace this with so many other great things. Mini chocolate chips, chopped nuts, or nothing at all would be fine too.

      • Mary Ann says

Hi! Love this recipe and will try it. If you can’t find the Andes mint chips. How about getting the little bars and and crushing them for the topping?

  8. Vivian says

Lisa, I made the Bailey’s fudge last holiday season and everyone enjoyed it. I am preparing to make it again today. Thanks, Viv

  9. Bonnie says

I was wondering can I double this recipe

    • Lisa Longley says

Yes, the only issue would be the pan size. It’s made for an 8 by 8 pan, and so you would need an 8 x 16 inch pan – which doesn’t exist. I would suggest two square pans or a 9 by 13 inch pan and just know the pieces will be thicker.

  10. Patti says

I’m in Canada and would love to make this but what are Andes baking chips and what could I substitute for them here? Do I really have to order online for only half a cup of them?

    Thanks!

    • Lisa Longley says

Oh Patti! You throw whatever you want on top! Or nothing at all. Mini Chocolate Chips, chopped almonds, chopped pecans, some other mint flavored chocolate chopped up. Anything.
