This Bailey’s Fudge is easy to make, tastes absolutely delicious, and is the perfect amount of rich amazingness!

The most embarrassing thing happened to me the other day.

So I was at Target looking for cookie cutters shaped like ninjas because, I mean, why wouldn’t I be doing that on a random Tuesday night?

I was walking around listening to my podcast and shopping, which has become my newest and very favorite pastime #nerdpastimes, and I guess going there I just assumed that ALL the Christmas stuff would be out. I mean, I’m working on all my Christmas posts, so it stands to reason that Target would have all their partridges in pear trees in a row . . . . that was supposed to be like ducks in a row . . . I sense it fell flat . . .

Anyway!

So, their Christmas stuff is not in fact all out as I thought it would be, but there were a bunch of guys opening boxes and putting it out. Given that shopping trips alone to Target are more rare than my house being clean and going with the kids makes me want to stab myself in the eye with all the plastic spoons Target has to offer . . . I thought I should just go and ask them about it. I mean. There had to be some ninja cookie cutters in those unpacked boxes. #firstworldproblems

So I ask one of the guys about it and made a joke about something because obviously I’m hilarious and need to show that to everyone all the time . . . . and you guys. I think he thought I was flirting with him! All of the sudden he worked into the conversation that he is married. You guys. It wasn’t a conversation. I was asking about cookie cutters!

All of the sudden it occurred to me “OMG. He thinks I’m flirting with him!!!” And as the thought occurred to me, approxiatmely 0.2 seconds after he mentioned his wife, my face went BEET red. Which I’m sure was really further evidence that for him that I was the most desperate of housewives. I was dying. I am not even kidding when I tell you that I seriously considered explaining to him, much in the same way that I have done here with you, dear wonderful strangers of the whole inter webs.

But then he quickly told me he didn’t have the cookie cutters and I swallowed what was left of my pride, hung my head, and high tailed it to the baking section where I promptly bought them out of chocolate chips, Ande’s pieces, and all the sweetened condensed milk I could get my hands on.

I already had Baileys.

It is phenomenal, delicious, and so ridiculously easy. This fudge is perfect for gift giving because it is so insanely easy to make. And it is totally addictive. I made a video for this post (YAY!! . . . Other side note . . . did you know that you really get shown only like 1% of what I post on FB if you don’t interact with the posts . . Facebook loves showing you videos though, that’s why so many food bloggers you love have been doing them.) and because of that and the needs for a pan to make, a pan that was done . . . and a video retake that required ANOTHER pan, I literally have so much of this fudge.

And I’m okay with that :)

This fudge is fine out of the fridge, but if you want it to be very firm I would keep it in there. Enjoy peeps!

EDITED TO ADD: I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.

Bailey’s Fudge

This Bailey’s Fudge is easy to make, tastes absolutely delicious, and is the perfect amount of rich amazingness!

Ingredients

  • 3 1/2 cups milk chocolate chips about 21 ounces
  • 1 cup sweetened condensed milk (see note)
  • 1/4 cup Baileys see note
  • 1 tsp vanilla extract
  • 1/2 cup Andes baking chips

Instructions

  • Line an 8 by 8 inch pan with aluminum foil.
  • In a large bowl combine the chocolate chips and sweetened condensed milk. Microwave for one minute, stir, and microwave for 30 seconds.
  • Stir in the Baileys and the vanilla extract until smooth. Pour into the prepared pan and top with the baking chips. Press in slightly.
  • Cover and refrigerate for four hours until firm. For firmer fudge store in the refrigerator.

Notes

I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.
Please do not use the entire 14 oz can of Sweetened Condensed Milk in this recipe. Be sure to pour it into a glass measuring cup and only use 1 cup or 8 liquid ounces. Using a brand name ensures better results, and mixing up the can before measuring out the 8 ounces also helps.

    This fudge turned out amazing! I only had Salted Caramel Bailey’s from the freezer so I used 1/4 cup of that. I used Ghirardelli Dark Chocolate Sea Salt Caramel squares chopped on top. That was a bit messy. I’ll need to change that up next time. This was the best fudge I’ve ever had. I almost feel guilty that it was so easy.

      OMG, now I have to make it with the Salted Caramel Baileys! Maybe next time just throw a little kosher salt on top. I’m so glad you liked it!

    I’ve made this fudge for past 3 years and all my family love it is the best fudge ever. I don’t have any problems with it setting use 1/4 cup of Baileys

    Hi Lisa,
    Thank you for the easy follow recipe’s, everytime I try something, I make my poor husband go first, he is my guinea pig ooops I mean tester. He has not once said oh I think that’s a fail. I do make him say thank you Lisa though.

    What is Andes chips as I live in Australia and never heard of that product.

      We have these great chocolates here called Andes Candies that are teeny chocolate bars layered with mint. The chips are the broken up version. You can really top this fudge with anything though. Mini Chocolate Chips would be a great idea.

    My mother-in-law made this fudge every year for Christmas but would NEVER give anyone her secret recipe. After about 10 years along with our Christmas fudge was a file card with this recipe on it. At the bottom of the card she wrote “I hate to give up my secret recipe, but for you I will”
    When I called to thank her, she laughed and said that it was the recipe that was on the back of the toll house chocolate chip bag from years past, and nobody ever figured it out. I still have that old card and I still make this fudge. (and i still miss my wonderful “other mother”

      I’m so sorry you had that experience. Without being there it’s hard to know what went wrong. I can tell you that using Eagle brand sweetened condensed milk and mixing it first before measuring really help.
