This Bailey’s Fudge is easy to make, tastes absolutely delicious, and is the perfect amount of rich amazingness!

You guys.

The most embarrassing thing happened to me the other day.

So I was at Target looking for cookie cutters shaped like ninjas because, I mean, why wouldn’t I be doing that on a random Tuesday night?

Side note, they are for a Christmas post that is coming your way soon ;)

In front of a bottle of Bailey's, a stack of Bailey's Fudge topped with chopped up Andes chocolate

I was walking around listening to my podcast and shopping, which has become my newest and very favorite pastime #nerdpastimes, and I guess going there I just assumed that ALL the Christmas stuff would be out. I mean, I’m working on all my Christmas posts, so it stands to reason that Target would have all their partridges in pear trees in a row . . . . that was supposed to be like ducks in a row . . . I sense it fell flat . . .

Anyway!

So, their Christmas stuff is not in fact all out as I thought it would be, but there were a bunch of guys opening boxes and putting it out. Given that shopping trips alone to Target are more rare than my house being clean and going with the kids makes me want to stab myself in the eye with all the plastic spoons Target has to offer . . . I thought I should just go and ask them about it. I mean. There had to be some ninja cookie cutters in those unpacked boxes. #firstworldproblems

So I ask one of the guys about it and made a joke about something because obviously I’m hilarious and need to show that to everyone all the time . . . . and you guys. I think he thought I was flirting with him! All of the sudden he worked into the conversation that he is married. You guys. It wasn’t a conversation. I was asking about cookie cutters!

All of the sudden it occurred to me “OMG. He thinks I’m flirting with him!!!” And as the thought occurred to me, approxiatmely 0.2 seconds after he mentioned his wife, my face went BEET red. Which I’m sure was really further evidence that for him that I was the most desperate of housewives. I was dying. I am not even kidding when I tell you that I seriously considered explaining to him, much in the same way that I have done here with you, dear wonderful strangers of the whole inter webs.

But then he quickly told me he didn’t have the cookie cutters and I swallowed what was left of my pride, hung my head, and high tailed it to the baking section where I promptly bought them out of chocolate chips, Ande’s pieces, and all the sweetened condensed milk I could get my hands on.

I already had Baileys.

#duh

And here, you have the Bailey’s Fudge bought from that fateful night, lol.

It is phenomenal, delicious, and so ridiculously easy. This fudge is perfect for gift giving because it is so insanely easy to make. And it is totally addictive. I made a video for this post (YAY!! . . . Other side note . . . did you know that you really get shown only like 1% of what I post on FB if you don’t interact with the posts . . Facebook loves showing you videos though, that’s why so many food bloggers you love have been doing them.) and because of that and the needs for a pan to make, a pan that was done . . . and a video retake that required ANOTHER pan, I literally have so much of this fudge.

And I’m okay with that :)

This fudge is fine out of the fridge, but if you want it to be very firm I would keep it in there. Enjoy peeps!

EDITED TO ADD: I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.

Notes

I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.
Please do not use the entire 14 oz can of Sweetened Condensed Milk in this recipe. Be sure to pour it into a glass measuring cup and only use 1 cup or 8 liquid ounces. Using a brand name ensures better results, and mixing up the can before measuring out the 8 ounces also helps.

What are Andes baking chips? Is there a substitution for them?

    • Lisa Longley says

You can see them here: Andes Baking Chips. You could put really anything else on top. Chopped nuts would be great, mini chocolate chips are another great option.

I love this recipe, it never lasts long because it’s gets straight away. How long will last once made . I’m gifting some this year

    • Lisa Longley says

I’m so glad you enjoy it, Caroline! It lasts about 2 weeks after making, but it freezes really well.

I make this every Christmas for me and my adult kids. But I think you need to modify your recipe. ONE whole can of sweetened condenced milk IS 8 ounces exactley or ONE cup. Use the WHOLE can. We measured it into a plastic measuring cup and then in cup glass Hocking measuring cup. It came out to be exactley ONE CUP. So in other words use the whole can. Pay NO attention to the 14 ounces on the can. It has to do with the weight of the sweetened condenced milk.

    • Lisa Longley says

I would beg you not to say this, lol. There are many MANY brands that sell 14 ounces of liquid sweetened condensed milk, and if someone uses that whole can, this will absolutely not work.

Loved your blog. We don’t drink alcohol I was wondering if you could use Baileys coffee creamer ,

    • Lisa Longley says

I can’t think of a reason that wouldn’t work, as long as you use the same amount of liquid.

Mine is coming out too hard . I put in fridge to set. It wasn’t setting fast enough on counter . It keeps getting too hard. I am following recipe, exactly. Please help! I love the taste so much!! I am making for Christmas cookie exchange.

    • Lisa Longley says

If you leave it out on the counter for a bit is it softening?

  6. Melinda says

Could the recipe be modified to 1/2 cup condensed milk & 1/2 cup Baileys?

    • Lisa Longley says

Possibly. I haven’t tried that. You do run the risk of it not setting.

Really like this recipe! So creamy! I only had 2 cups milk chocolate chips so supplemented with semisweet. After reading some had issues with not setting up, I used half dulce de leche sweetened condensed milk and half regular SCM and mixed together well before adding to chocolate chips. Next time I may use the dulce de leche only and add a bit more Bailey’s.

The fudge was very thin, not thick like the picture and stuck to the foil. I followed the recipe exactly. This was for gifts so I may reinvent and roll into balls and dip in powdered sugar. The flavor is very good so I hate to toss it

    • Lisa Longley says

I’m so sorry this didn’t work out for you. My best guess would be the brand of sweetened condensed milk or not stirring it before using it. I think that rolling it into truffles is a great way to salvage it.

  9. Rd says

Can you use semi-sweet instead of milk chocolate?

    • Lisa Longley says

You can, but I will tell you that many have had the experience that milk chocolate melts better and works better for this recipe.

Delicious! I used half sweetened condensed milk and half dulce de leche (next to SCM in baking aisle). It set up perfectly. Next time I will add pecans and try a bit more Bailey’s.

I’m so glad that you liked it!
