Nathan and I love a good steak at home, and we have it down to an art. Just a simple sear on both sides before popping it in the oven to finish it off. These steak bites take that method, minus the need to finish it off in the oven, and add in the delicious taste of garlic and butter for a delightfully decadent recipe.

How to Make Steak Bites

Below is a brief overview of how this garlic steak bites recipe comes together. For the full recipe, including all ingredients and their measurements, scroll to the recipe card at the bottom of the post.

Cut and Season the Steak

Season the cut up steak with salt and pepper while your skillet heats up.

Sear the Steak

Add the steak in an even layer to the hot pan and allow it to sear for two minutes without stirring. Then flip each piece and cook for another two minutes. Remove the steak from the pan.

Make the Garlic Butter Sauce

Add the butter to the hot skillet, then add the garlic and sauté for 30 seconds, stirring often. The key to garlic steak bites is not to burn the garlic, so be sure to watch it closely. Add the steak bites back to the skillet to cover the pieces in the garlic butter sauce. Garnish with fresh parsley and enjoy!

How to Eat Steak Bites

I personally love to eat this right out of the pan while they are warm and just off the stove-top. These are delicious rounded out with a side or two. But these are also fantastic incorporated into other dishes. These would be fantastic over a salad, as part of a rice bowl, or in a taco.

Tips and Tricks

  • Use real garlic: Garlic is a key ingredient in this recipe, so be sure to use real garlic and not garlic powder.
  • What kind of steak to use: I love to make this recipe with sirloin steak, it has great flavor and is tender, and affordable. You could also use ribeye or strip steak.
  • Use a heavy bottomed pan: This will evenly distribute the heat over the bottom of the pan and prevent some areas from burning.
  • Make sure your pan is very hot: This will give your steak that delicious outer sear. I use my cast iron skillet and watch for the oil to shimmer.
  • Use an oil with a high smoke point: We are using canola oil in this recipe because of its high smoke point, or the point at which the fat starts to break down. In other words, it can get to 400 degrees Fahrenheit and olive oil and butter cannot.
  • Storing leftovers: These steak bites are best when eaten hot and fresh out of the pan, but you can store any leftovers in an airtight container in the refrigerator for up to three days. Reheat the portion you plan to eat in a hot skillet with a little bit of butter.

1 pound top sirloin steak, 1 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper
  • Add the butter to the pan and allow it to melt. Add in the garlic and sauté for 30 seconds or until it becomes fragrant. Remove the pan from the heat.
2 tablespoons unsalted butter, 2 garlic cloves
  • Add the steak back to the skillet and toss to combine with the garlic butter sauce.

Notes

We are using canola oil in this recipe because of its high smoke point. In other words, it can get to 400 degrees Fahrenheit before the fat starts to break down, which leaves your food bitter. Olive oil has a smoke point of 350, and butter has a smoke point of around 300.
