You will love waking up to this tater tot breakfast casserole. It is simple to make, but so comforting and filling.

If you are serving a crowd breakfast, you are definitely going to want to make this breakfast casserole with tater tots. It is so easy to whip up, but a few little things make it extra special. The seasonings are just right and we use half and half to make it rich without taking it over the top.

How to Make Breakfast Tater Tot Casserole

Cook the Breakfast Sausage

Break it up in a skillet as it cooks until it is all browned.

Combine the Eggs

In a large bowl, whisk the eggs, half and half (or milk), salt, garlic powder, onion powder, and pepper. Stir in some cheese.

Put the Casserole Together

In the baking dish, combine the cooked sausage and the tater tots. Pour the egg mixture over the top and stir to combine.

Bake the Breakfast Casserole

Sprinkle the remaining cheese on top and bake for about an hour, or until the sides pull away from the pan. Let it sit for 10 minutes before cutting.

Making Ahead

This tater tot breakfast casserole with sausage is a great recipe to make the night before. Put the casserole together up to the point of adding the shredded cheese. Cover it tightly with foil or plastic wrap and refrigerate overnight. In the morning, uncover, top with the remaining cheese, and bake for 40 to 50 minutes.

Storing Leftovers

Store any leftover sausage breakfast casserole in an airtight container in the refrigerator for up to three days. Reheat only the portion you plan to eat in the microwave or oven until heated through. Always use your best discretion with eating leftovers.

Tater Tot Breakfast Casserole

Ingredients

  • 16 ounces breakfast sausage
  • 8 large eggs
  • 1 cup half and half or milk
  • 1 teaspoon kosher salt or 1/2 teaspoon table salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 cups cheddar cheese finely shredded, divided
  • 32 ounces frozen tater tots unthawed

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Spray a 9 by 13 inch baking dish with cooking spray and set aside.
  • Cook the breakfast sausage in a large hot skillet over medium heat, breaking it up as it cooks. Once browned, remove from the heat, and drain any excess grease.
    16 ounces breakfast sausage
  • In a large bowl, whisk the eggs, half and half (or milk), salt, garlic powder, onion powder, and pepper. Stir in 1 cup of the cheese.
    8 large eggs, 1 cup half and half, 1 teaspoon kosher salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/4 teaspoon black pepper, 2 cups cheddar cheese
  • In the baking dish, combine the cooked sausage and the tater tots. Pour the egg mixture over the top and stir to combine. Top with the remaining 1 cup of cheese.
    32 ounces frozen tater tots, 2 cups cheddar cheese
  • Bake 50 to 60 minutes or until the casserole starts to pull away from the edges of the pan. Let rest for 10 minutes before cutting and serving.
