These Buffalo Chicken Pinwheels are the perfect appetizer if you are hosting a game day party. They are made with just a few simple ingredients and they come together in a flash. They will be eaten up just as quickly.

How to Make Buffalo Chicken Pinwheels

  1. Roll out crescent roll dough. If it is the kind with seams, gently push the seams together with your fingers.
  2. Combine the filling. In a small bowl combine buffalo sauce, cooked chicken, mozzarella cheese, sliced green onions, and blue cheese.
  3. Assemble the pinwheels. Cover the dough with the filling and gently roll up the dough. It works best if you freeze the dough for 30 minutes before you slice it. Slice it into 12 equal pieces and place them on a baking sheet.
  4. Bake and enjoy the pinwheels. Bake the pinwheels and serve them hot.

What Dough to Use

I have made these with crescent roll dough, puff pastry, and pizza dough. My favorite by far was the crescent roll dough. It works best with the filling and it becomes deliciously flakey.

The dough you see pictured in these step by step photos is the puff pastry, but it is the same process with the pizza dough or the crescent roll dough.

Keeping Chicken on Hand

I love keeping bags of frozen chicken in my freezer for recipes like this. This recipe only calls for a very small amount of cooked chicken, so having that bag handy and being able to pull out just 1/2 a cup is perfect.

I have a whole post on how to freeze shredded chicken to keep it ready for recipes like this: How to Freeze Cooked Chicken.

Buffalo Sauce for Chicken Pinwheels

It is very easy to find bottles of Buffalo sauce in grocery stores in the United States. Any store-bought Buffalo sauce will work well in this recipe. If you are overseas or you would like to make your own, you can use my Homemade Buffalo Sauce. Keep in mind that this sauce recipe makes just under one cup. You may want to cut the recipe in half.

This Buffalo Sauce sauce is a very easy 10 minute recipe that is perfect for wings, and so many other great Buffalo flavored recipes.

Shredding Cheese

As with any recipe where cheese plays a major roll, these pinwheels are best when you shred your own cheese from a block. It melts so much better than pre-shredded cheese that you buy in bags. It is worth the extra few minutes that it takes.

FAQ

Can Buffalo Chicken Pinwheels be made ahead?

I do not recommend making this recipe ahead of time. My experience with store-bought dough is that it doesn’t hold up the best once it is out of the container. You are better off making the filling ahead of time and then assembling right before making these.

Can I leave out the Blue Cheese?

Of course. Just substitute with more mozzarella cheese.

Are Buffalo Chicken Pinwheels spicy?

I do not find that these are particularly spicy. While the sauce itself is spicy, we aren’t using a lot of it here. Additionally, there are a lot of other ingredients, the cheese for example, that balance out the spice of the sauce.

Buffalo Chicken Pinwheels

Serves: 12 servings
(tap # to scale)
Prep: 10 minutes
Cook: 25 minutes
Total: 35 minutes
Buffalo Chicken Pinwheels are an easy appetizer that combine the great taste of Buffalo sauce with chicken and cheese. These will be the first snack to go!

Ingredients

  • 8 ounces crescent roll dough
  • 1/2 cup shredded chicken
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup blue cheese (or use more mozzrella)
  • 1/4 cup scallions chopped
  • 1/4 cup Buffalo sauce

Instructions

  • Preheat your oven to 350 degrees. Line a rimmed baking sheet with parchment paper.
  • In a small bowl combine the chicken, cheese, scallions and Buffalo sauce.
  • Roll out the crescent roll dough. If it is the dough that has the seams, gently press them together to make one solid roll of dough.
  • Spread the chicken mixture over the entire area of the dough. Roll up the dough so that the longest length of the dough rolls up on itself. For best results with slicing, place the rolled up dough in the freezer for 30 minutes. Slice into 12 equal pices and place flat side down on the prepared baking sheet.
  • Bake for 20 to 25 minutes or until the dough is golden brown. Enjoy warm.

Notes

Sauce can be made a day or two ahead of time and stored in the refrigerator.
